Vegan morning meal Recipes - Easy and delicious morning meal Recipes

A common misconception held by many individuals is that a vegan diet is lacking in cusine and variety. Many apparently believe that meat and animal products must be in a diet to help them maintain a wholesome life filled with tasty food, but that is literally not the case.

There are many variety-filled vegan recipes out there for all meals during a day. Some of the most uncomplicated and scrumptious are vegan breakfast recipes, which use literally no animal products on the path to making a nutritious, wholesome and yummy meal to start the day.

Breakfast Pizza

One uncomplicated vegan recipe is for blueberry pancakes, an all-American breakfast table staple. To make this dish, simply consolidate two cups unbleached white flour, three tablespoons sugar, three tablespoons baking powder and one teaspoon salt together in a large bowl. Add two cups vanilla soy milk and three tablespoons canola oil to the dry combination and stir it all together until the batter is smooth. To one side prepare a bowl full of 1/2 cup frozen or fresh blueberries. Ladle the batter onto a hot pancake griddle or skillet, adding blueberries to the top immediately. Cook two to three minutes per side and serve warm.

Another recipe is a vegan take on potatoes and bacon. To make a potato and "bacon" hash, dice four medium white potatoes, place them into a pot, cover them with water and bring them to boil over medium heat. Allow them to boil 10 to 15 minutes, then drain and rinse them with cold water. While the potatoes cool, heat 1 tablespoon of olive oil over medium heat in a small skillet. Add 8 ounces of tempeh that has been cut into 1/2 inch cubes, along with 1 1/2 tablespoons soy sauce and 1 1/2 tablespoons liquid smoke. Cook the combination until all liquid has been absorbed, then flip the pieces of tempeh over and sprinkle with the remaining soy sauce and liquid smoke. Cook until the tempeh is crispy. Finally, heat three tablespoons olive oil in a large skillet, then add one diced onion and the potatoes to the hot oil. Cook almost 10 minutes before stirring in the tempeh, salt and pepper. Serve hot.

Being vegan does not have to limit a person's food choices at all. With a small research and time, whatever can cook yummy vegan breakfast recipes to start their day off on the right foot.

Mexicans love to eat big, hearty meals and breakfast is no exception. A good breakfast is important in every culture and Mexicans love to start their day with a delicious Mexican food recipe.

Typical Mexican breakfasts vary between the different regions in Mexico but tortillas are the defining element of Mexican breakfast dishes.

Mexicans use tortillas like other nations use bread and you might find breakfast burritos or breakfast tacos on a Mexican menu. Tortillas are unleavened and often made with maize flour, and they have been around for thousands of years.

Huevos rancheros is a typical Mexican breakfast and this is made by topping a tortilla with fried eggs and adding some hot sauce. Eggs feature in many breakfast recipes actually and Mexicans eat them boiled, scrambled or fried for breakfast. Omelets are another way to use them. If eggs are on the breakfast menu, hot sauce is usually not far away.

Mexicans enjoy eating fresh produce at every meal and this includes fruit and vegetables. Tomatoes, corn, beans, cilantro and fresh fruit are all served at breakfast time in Mexico. These ingredients also feature in many other Mexican recipes.

Mexican Breakfast Drinks

Hot chocolate and coffee are equally popular at breakfast time in Mexico. A thick hot chocolate called champurrado is a delicious, cinnamon-infused concoction, which is an enjoyable and warming drink for a cool morning.

Crusty rolls called bolillos are often dipped into milky coffee or Mexican hot chocolate. Sweet chocolate, fruit or nut pastries might be served with coffee or hot chocolate. A lot of Mexicans have a sweet tooth.

Recipe for Corn Pancakes with Cilantro and Scallions

The following recipe is guaranteed to fill your family up at breakfast time. These corn pancakes contain eggs, corn kernels, scallions and cilantro and they are filling and delicious. Sour cream and mild tomato salsa are great accompaniments.

If you normally have your pancakes with maple syrup, why not try this tasty Mexican variation? This recipe makes enough to feed a family of four.

You will need:

1 egg
1 cup yogurt
1/2 cup all purpose flour
1 teaspoon baking powder
1/4 cup chopped fresh cilantro
1/3 cup chopped scallions
2 tablespoons vegetable oil
1 teaspoon sugar
1/2 teaspoon baking soda
1 small jalapeno, seeded and chopped
1/3 cup cornmeal
1/4 teaspoon salt
1 cup cooked corn kernels
Sour cream and mild tomato salsa, to serve

How to make it:

Sift the flour into a bowl, with the baking soda, baking powder, salt, and sugar. Stir in the cornmeal.

Beat the eggs, yogurt, corn, scallions, cilantro, jalapeno, and vegetable oil in another bowl, and then add this mixture to the flour mixture.

Heat a skillet over a medium high heat and brush it with oil. Ladle some of the batter into the hot skillet and cook it until there are little holes. Flip the Mexican pancake and brown the other side.

Repeat this until you have used all the batter. Serve the pancakes with sour cream and mild tomato salsa.

Just think about it, the excessive grease and the high fat content. It's frightening to say the least. Here is a recipe for a healthy alternative to the typical pizza shop slice. This recipe uses various nutritious foods including chia seeds. Chia seeds are a delicious superfood. Their use dates as far back as the Mayan, Aztec, and Incan times where they were a staple of the diet. They are high in antioxidants and omega 3's,6's, and 9's - all necessary to your daily diet. This one ingredient will add great nutritional benefit.

Mexican Pesto Pizza
Pesto:
2 Tbps. Navitas Naturals Hemp Seeds
1/4 Cup Pumpkin seeds
1/2 Cup Cilantro, tightly packed
2/3 Cup Baby spinach, tightly packed
1 Clove garlic
1/2 Jalepeno pepper, deseeded
1/3 Cup Hemp oil (or olive oil)
2 Tbsp. Lime juice
1/2 tsp. Sea salt

Breakfast Pizza

Gather the dough into a ball and knead it for one minute. After kneading the dough let it stand for ten minutes. Sprinkle a non-stick baking sheet with the 2 Tbsp. of Chia seeds that you had set aside. Roll the dough out upon the chia seed into a 9x13 inch rectangle or similar shape. Upon the completion of rolling out the crust, bake it for ten minutes in the preheated oven.

Pesto Sauce- Combine all of the dry ingredients in a blender or food processor. Pulse the ingredients until they are finely chopped. Once the ingredients are finely chopping, slowly add the oil and process the mixture until it is fully blended together.

Assemble- Once the crust has finished baking, spread the pesto onto the crust. Top with the thinly cut tomatoes. Bake the pizza for 15 minutes. After you remove the pizza from the oven, sprinkle it with cilantro and let it stand for 2 minutes. After the pizza has cooled, cut it up using a sharp knife or a pizza cutter and serve. Orange-Blueberry Breakfast Bread: A Delicious Way to Start Your Day

Coffee and tea drinkers look forward to the first cup of the day, the fragrant, steaming brew that gets them up, gets them thinking, and gets them on their way. Home-baked goods are also eye-openers for many of us. This Orange-Blueberry Breakfast Bread smells marvelous when it's baking and, thanks to the citrus tang, tastes as good as it smells.

Before you start baking look over the blueberries carefully. Remove any stems and leaves that you find. Discard berries that are starting to "turn" because they won't withstand the baking time. Rinse the blueberries and dry them well. This recipe is based on a recipe that has been around for years. To make the recipe healthier I added wheat flour, used Splenda for sweetness, and substituted unsweetened applesauce for the shortening.

Breakfast Pizza

After the bread comes out of the oven let it cool (in the pan) on a rack for 20 minutes. Turn the bread out of the pan and let it cool completely. Use a serrated knife to slice the bread. One loaf yields about 16 slices. This bread has so much flavor you don't even need butter. Now on to the star of the show, Orange-Blueberry Breakfast Bread.

DRY INGREDIENTS

1 cup white and wheat flour blend

1 1/2 cups presifted white flour

1/2 cup Splenda Sugar Blend for Baking

1/2 cup Splenda

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 cups fresh blueberries

WET INGREDIENTS

2 large eggs, room temperature

3/4 cup fresh orange juice

1 tablespoon pure orange extract

1/4 cup unsweetened applesauce

2 tablespoons canola oil

METHOD

Preheat oven to 375 degrees. Coat a loaf pan with baking spray and set aside.

In a large bowl combine dry ingredients with a whisk. Sprinkle the blueberries over the flour mixture and fold in gently with a rubber scraper. Make sure all of the berries are coated with flour.

In a small bowl beat the eggs with a fork. Add the orange juice, orange extract, applesauce, and canola oil and combine well. Pour the wet ingredients into the dry, mixing with a rubber scraper just until the batter is moistened. Turn into prepared loaf pan and bake for 45 minutes, or until the bread starts to pull away from the pan. This bread freezes well.

Gnocchi Covered in Maple Sausage Gravy - Oh My God This is Delicious

It just doesn't get much easier then this. Originally, I was going to make sausage gravy and biscuits for breakfast one Sunday morning, but I was voted against buy the family, because they all decided they wanted French Toast instead, so guess what we had for breakfast? That's right, we had French toast, but the upside is, I had the stuff for Sausage Gravy sitting there waiting to be created into some other new and exciting dish.

So that evening, as I sat there wondering what I was going to do for dinner, it suddenly hit me, and here is what I had to make it happen. If you read my article describing what a Gnocchi is, then you are up to speed on that, if you haven't, then I suggest you do so. If you already know what they are, then read on and try this. If you don't care either way, read on and try it anyways.

Breakfast Pizza

Here is what you will need:

1 Tube of Jimmy Dean Maple flavored Breakfast Sausage, or similar.
2 Pouches of McCormick Country Sausage Gravy dry mix
4 Cups of Water
2 16-Ounces Gia Russa Gnocchi with Potato, or equivalent, (you can order right from Amazon.com)
1 tbsp of oil (cooking not motor) what ever you have
Seasonings Salt, Pepper to taste and any other seasonings you may like

It couldn't be much easier, get a large pot, fill it with water and add your oil to it, this is to ensure your Gnocchi doesn't end up sticking together. I also like to open the package of Gnocchi and dump them into a strainer and break them apart, as they are vacuum packed tightly together and they tend to stick together, which can make them cook unevenly, which you don't want to happen. Once you have it on the stove, turn it on high and wait for the water to start to boil.

Then grab a large skillet or frying pan and open your tube of Sweet Maple sausage and put it in the skillet and turn it on high. Do your best to break it up into nice little pieces as you cook it, sort of the way you would want ground beef to look if you were making Sloppy Joe's or something along those lines.

While it is cooking, grab a measuring cup and use it to measure 4 cups of water and dump them into a large bowl, obviously large enough to hold the 4 cups of water. Using a wire whisk (a fork can work, but a whisk is better), slowly add the content from the two McCormick Sausage Gravy mix pouches into the water and mix thoroughly. When the Sausage is fully cooked, slowly pour this water mix directly into the skillet with the sausage and leave on high, being sure to stir frequently.

By now, the water should be boiling in your big pot so take your Gnocchi and carefully dump them into the boiling water. The will initially sink to the bottom of the pot. Stir at first to make sure none of them stick to the bottom of the pot, but then let them boil for a few minutes. They will not take long, when you see them floating at the top, they are done. Just dump them right back into that strainer you used to separate them when you emptied the package of them in the first place. You can then give them a little rinse with warm water to wash away any excess starch. You don't have to, but I usually do.

By now your gravy should be nice and thick, so turn off the stove and you are ready. Grab a few spoonfuls of the Gnocchi and put them on a plate or in a bowl and spoon a generous portion of the Sausage Gravy over the top of them, and season to taste. Nothing left but Good Eats and Enjoy!

How to Make a Delicious Healthy Pizza Recipe

There are lots of types of pizza. You can have a thin, crispy crust or a thick, bread crust. There are various pizza sauces, including traditional tomato sauce, spicy sauce or even a parsley infused creamy white sauce. Pizza toppings vary enormously. Pepperoni pizza is the most popular pizza variety but this is only one type.

Some people like to stick with a theme when making pizza recipes. They like to use various types of meat for a meat feast pizza, white and green ingredients only for a "white pizza recipe" or the most colorful ingredients they can find for a grilled vegetable pizza. Other people enjoy mixing and matching their pizza toppings or using up anything in the refrigerator that needs to be used up.

Tips for a Nutritious Pizza

If you want to make a healthy pizza, there are a few things you can do. Choose a thin pizza crust rather than a calorific deep dish one. Use a tomato sauce rather than a cream sauce and choose your pizza toppings with care.

Vegetables are great for topping your homemade pizza recipes because they are colorful, flavorful and they suit any meat, poultry or fish toppings. You can add raw vegetables, grilled vegetables or thawed vegetables to your pizza.

Use reduced fat cheese instead of full fat cheese as a healthier topping for your pizza recipes. Goat's cheese and reduced fat mozzarella are a good combination. Hard cheeses like parmesan are also good, firstly because the strong flavor means you will not need to use much and secondly because hard cheeses are lower in fat than soft cheeses.

How to Roast Bell Peppers

Roasted bell pepper is one of the tastiest toppings you can use on a healthy pizza recipe. Roasting your own peppers is very easy and you can roast red, yellow, orange or green bell peppers. Roasting them makes them succulent, juicy and bursting with flavor.

There are various ways to roast a bell pepper. The easiest way is to put a bell pepper over the burner of a gas stove or on your grill. Turn the pepper using tongs and keep cooking it until the skin is black and charred.

Alternatively you can broil a bell pepper. Rub vegetable oil all over it first, and then put it on a baking sheet. Use tongs to turn it when the top starts to go black. You can either broil a whole bell pepper or slice it into wedges and broil those. Another method is to cook the bell pepper wedges or strips in a skillet in olive oil. When they are tender, they are done.

The easiest way to get the skin off a roasted bell pepper is to put it in a bowl and cover it with plastic wrap. This traps the steam. Leave the bell pepper for twenty minutes then you should find the skin comes off easily. Pull the stem out before you take off the skin. Roasted peppers make a delicious topping for homemade pizza recipes.

You can add nutritious ingredients to a pepperoni pizza or choose from many other types of pizza to adapt. Add some tasty roasted or grilled vegetables to your favorite pizza recipe and you can boost the nutritional value and the taste at the same time.

How to Make a Delicious Low-Fat Pepperoni Pizza

I'm a huge lover of pizza, unfortunately it really doesn't fit into the healthy lifestyle that I try to live. So as I usually do, I searched out and found myself a great low-fat pizza recipe that even your little kids will love.

I'm going to give the classic pepperoni pizza a healthy makeover, taking you from around 800 calories per large slice down to just a couple hundred calories per slice. With a few simple changes, you can create not only a great-tasting slice, but one that is very healthy to boot!

Let's get started....

The substitutions you are going to make are:

Regular pepperoni will be replaced with turkey pepperoni (your kids won't know the difference)

Regular cheese can be substituted with a low-fat version of cheese. This can be any type of cheese you want, just try to find something that has a maximum of 5-6g of fat per serving

The pizza pie is going to be substituted with a whole-wheat version. I personally like to purchase the pre-made version, so all I have to do is throw my ingredients on top and cook it. ** To save even more calories, get a "thin crust" pizza.

Pumpkin puree - This is something I was reluctant to try, but when you combine it with your sauce, it gives it a great flavor.

The sauce will be replaced with a low-sodium version, ideally something extremely low in sodium

* Before we start building our pizza, it should be noted that you can really make any type of pizza you want by keeping these substitutions as the cornerstone of your healthy pizza. As long as you have these substitutions in place, you can throw pretty much anything on top and you will keep it healthy and low in calories (I love throwing some chicken breast on there, which packs a great protein-punch and is low in fat and calories).

How to make it:

Thaw your whole-wheat pizza pie
Preheat oven to 450F
Mix 1 cup of your pumpkin puree with your tomato sauce, and for flavor add a touch of garlic if you want
Spread the sauce evenly over the pizza pie
Take your slices of pepperoni and disperse evenly throughout (the quantity depends on the size of the pizza pie, usually 1lb or 20-30 slices is sufficient to cover the majority of the pizza)
Top with 1-1.5 cups of shredded low-fat mozzarella
Place the pie on the lowest rack in the oven
Bake for 12-15 minutes (12min for a softer crust, 15 min for a crispy crust)

NUTRITION PROFILE:

Assuming a medium-sized pizza pie cut into 6 pieces, there is:
290 calories, 7g fat, 40g carbohydrates, 18g protein, 3g fiber, 600mg sodium

** To increase the fiber and lower the calories, substitute fresh vegetables for a portion of the meat and cheese.

** To lower the fat, substitute half of the pepperoni with sliced chicken breasts or even ground turkey breast.
