Mexican Chicken Pizza Recipe - How to Make a Pizza at Home With a Perfect Blend of Ingredients

The ingredients in this Mexican Chicken Pizza are a perfect mixing of flavors. Feel free to add or subtract ingredients depending on what you like best, but this is a great recipe to work from. Fun and easy to make. You can use a large cookie sheet or a couple medium pizza pans to cook on.

Mexican Chicken Pizza

Breakfast Pizza

Ingredients:

Frozen Bread Dough (White or Wheat) or Store Bought Pizza crust A Little Vegetable Oil Cornmeal
Refried Beans, cooked and thinned with water. BBQ Sauce, your favorite flavor from the grocery store. Jack Cheese (or any combo of Jack, Mozzarella, & Cheddar), shredded Chicken, cooked and shredded Red Bell Pepper, chopped Red Onion, chopped Black Olives, sliced Jalapeno Pepper, sliced thin, seeds removed (optional) Cilentro, chopped Salsa
Directions:

Pizza Crust: Defrost one loaf of the frozen bread dough according to directions. It seems to work best defrosting it slowly so it gets large and fluffy before you roll it out using a rolling pin. Put flour on your cutting board so the dough doesn't stick. If it is easier to purchase a premade pizza crust in your grocery store that will also work.

Grease your cookie sheet or two medium pizza pans using any kind of vegetable oil. One of my secrets to a good homemade pizza is putting some cornmeal on the pizza pan after you oil it. The cornmeal kind of acts like little ball bearings, keeping the dough from sticking to the pan, plus it adds a great flavor to any pizza.

Sauce: This will be your refried beans and BBQ sauce. Cook and crush your beans adding some water to make a thinner paste. Spread on the crust so it is a thin layer. Drizzle with your favorite BBQ sauce. A great mix!

Toppings: Spread shredded cheese on pizza to cover. Top with chicken, red bell pepper, red onion, black olives, and jalapeno pepper. Add a little more cheese on top.

Bake: 400° for about 15 minutes. Check it occasionally making sure it doesn't overcook. Cheese will be starting to bubble in center.

After baking, sprinkle the pizza with cilentro and your favorite homemade tomato salsa to add a wonderful fresh flavor.

Some pizzerias will add chopped tomatoes on top for a delectable finishing touch to their pizza, but in this case an authentic mexican salsa will finish your Mexican Chicken Pizza perfectly.

Preparing Perfect Pizza Dough

Perhaps one of the most famous Italian foods is pizza. It is hard to find someone that doesn't like pizza, especially since pizza artisans can create the perfect food with whatever toppings your heart desires. However for a more authentic experience, you should give pizza making a whirl at home. Creating the perfect pizza dough is not as hard as it sounds, and will beat the ready-made variety hands down. You and your family will be delighted with the results, and you will wonder why you have never given it a try before now.

What You Will Need To Get Started

Breakfast Pizza

Making your own pizza dough is not as difficult as it might seem. You really only need a few ingredients and a large bowl. The following is a simple recipe that will make enough for two plate-sized pizzas - enough for at least two people, maybe four if you have other dishes available. Remember, Italian pizzas are designed to be personal-sized so that everyone can have exactly what they would like on them. You will need 400 grams (about 14 ounces) of strong white bread flour. If you can find doppio zero flour, that is even better. Pour the flour into a bowl, add a few grinds of salt, and then mix in one packet of dried active yeast. Mix well.

Preparing The Pizza Dough

Once you have all the dry ingredients together for your pizza dough, it is time to get kneading. Pour in 250 milliliters of warm water (about a cup). This will activate the yeast so that your dough starts to rise. Start combining the dry ingredients with the water using your hands. This will cause a ball of dough to start to form. For a more finished flavor, you can add in a small amount of olive oil and milk to the dough. You will need to continue working the dough until all of the ingredients are combined and you have a smooth ball. If the dough remains too wet, add a little more flour to the mixture until it reaches the desired consistency. It should maintain its shape and not cling to the sides.

Rising Up

Once you have your pizza dough at the desired size, remove it from the bowl. Pour in enough olive oil to give the bowl a coating. Return the dough to the bowl and turn several times so that it is coated in oil. Doing so will prevent a dry crust from forming. Allow the dough to sit in the bowl in a warm part of the kitchen for two to three hours. It needs to double in size before you are ready to move on to the next step.

Prepping For Toppings

Once your pizza dough has properly risen, you will want to punch it down to remove the excess air. Flour your work surface and work the dough out. Cut it into two and work each piece into your desired shape. Whether you want a round or square pizza is up to you and will depend on the type of tray or stone that you will be baking it on. Allow the dough to rise for another 30 minutes on the baking tray. Top as desired and bake to create your perfect pizza.

Perfect Homemade Pizza Tips - Making Pizza at Home Can Be Easy!

I have to admit I am a pizza snob. I have spent most of my life searching for the most delicious pizza. Along my never ending journey I have come up with some must haves when making the perfect pizza. The most important thing I learned is that freshness counts. Whether it's the dough, sauce or the various toppings you prefer, you will always be a winner with fresh ingredients. The fresher the ingredients the better the taste of the pizza.

The most overlooked part of the perfect pizza is the dough used to make the crust. It doesn't matter if you prefer thin or thick crust. It just has to have flavor. I find that many pizza places these days use frozen dough they just roll out and serve. The crust is the foundation of the pizza and must not be overlooked. A pizza with a flavorless crust will be a disappointment to all who taste it.

Breakfast Pizza

After you have your dough, it is on to the sauce! Here you can choose a nice red sauce or go crazy and use a white sauce with garlic. It is all about the flavors you like. Taste, taste, taste, until you have the sauce you want. I like adding a little bit of garlic, oregano and sugar to my red sauce. That combination really makes my taste buds go wild.

Next we have the cheese we will use. To most people this would seem to be the easiest part. I have found that you actually need a good mixture of a few cheeses to get the right taste and texture for a perfect pizza. I hate it when I grab a slice and the cheese rips off the toppings of all the other slices. If you mix different kinds of cheese you will get a mix that actually breaks instead of stringing together. The combination I like to use is one half mozzarella, one quarter provolone, and one quarter jack cheese.

Last but not least, the toppings. This is actually the easiest part. All you have to do is choose the things you want on your pizza. Whether you are as simplistic as just cheese, or you like to spice things up with jalapenos and pineapple, you can't go wrong with what you like. The only tip I have for toppings is to make sure you spread them out evenly so that every bite has the same delicious taste you crave.

Old Fashion Recipes For Yummy Egg Dishes That Are Perfect For Breakfast Or Brunch

Doctors and nutritionists tell us breakfast is the most important meal of the day. And we diabetics must never skip breakfast! Here are a couple of recipes from my vintage recipe collection for dishes that are great for breakfast or brunch. The Amish Breakfast Casserole is one I got from an Amish lady in Indiana, who is now deceased, and the Taco Egg Scramble was in an old cookbook from my late mother's estate.

TACO EGG SCRAMBLE

Breakfast Pizza

6 large eggs, beaten
1/3 cup milk
1/3 cup chopped canned green chili peppers
1 tsp minced dried onion
couple splashes bottled hot sauce
1/4 tsp salt
1/8 tsp pepper
2 tbsp butter
3/4 cup shredded cheddar cheese
shredded lettuce
1 tomato, cut into wedges

In a medium bowl, combine the eggs, milk, chili peppers, onion, hot sauce, and salt; allow to stand for 1 minute. In a 10-inch skillet, melt the butter. Add the egg mixture to the skillet. Cook without stirring until the mixture begins to set. Lift and fold the partially cooked eggs with a spatula so the uncooked portion flows underneath. Stir in half the cheese. Cook 5 to 6 minutes more or until eggs are completely cooked. Serve on a bed of shredded lettuce topped with the remaining cheese and tomato wedges.

Yield: 4 servings

Note: The above recipe is a good dish for diabetics as each serving has only 5 g carbs but 22 g protein.

AMISH BREAKFAST CASSEROLE

8 slices of bread, cubed
1 lb bulk pork sausage, fried, crumbled, and drained
6 eggs
2 cups milk
1/4 cup butter
1/2 tsp dried mustard
1 lb of grated cheese
1/2 tsp salt
1/4 tsp black pepper, optional

Put bread in the bottom of a casserole dish. In a separate bowl, beat eggs and add milk, onion, salt, pepper (if using) and mustard. Sprinkle sausage and cheese over the bread. Slice butter over the cheese and pour the egg mixture over all. Bake in a medium heat oven (325 degrees) for about 45 minutes.

Enjoy!

Tips For the Perfect Pizza Dough

Making your own pizza dough is not only less expensive than relying on the store-bought or take-out types, but it is also a great way to enjoy a variety of delicious pizza pies. Moreover, while you do not need any special culinary skills to make the perfect pizza dough, there are still a few tips you will definitely want to keep in mind.

First, always preheat your oven as directed in the dough recipe you are following. Average temperatures for making pizza dough range from 400 to 500 degrees Fahrenheit. Exact cooking times will depend on the number of toppings used as well as the desired thickness of the crust or dough.

When kneading dough, you may need to use some extra flour to keep it pliable and easy to work with, but do not add too much or it will become dry and crack. Alternatively, if your pizza dough feels more like cake or cookie batter, it is too wet and will need more flour.

Always add extra water and flour in very small amounts.

When it comes time to adding the toppings, do not put too many in the center of the rolled out dough. When pizza is cut into slices, the center of the pie is where the smallest part of each slice will be. For the best results, distribute your toppings evenly around the pie.

Recipe for Easy Pizza Dough

What You Need

1 cup warm water
2 teaspoons honey
1 teaspoon salt
1 teaspoon yeast
3 1/2 cups flour
2 tablespoons olive oil

How to Make It

Preheat the oven to 400 degrees. In a medium sized mixing bowl, add the warm water, honey, and salt and stir together. Add the yeast to the water mixture and allow to sit for 10 minutes.

Next, gradually add the flour, then the olive oil and mix together with a spoon. When the mixture becomes too thick to continue mixing with the spoon, begin to knead the dough with your hands.

Continue kneading the dough until you have a round, smooth ball. Put the dough in a large bowl and coat with olive oil before covering with plastic wrap and set on the counter. Allow the dough to rise inside the bowl in room temperature for about an hour.

After the dough has risen, push down into the center of the ball to deflate the dough. Then, recover the dough before allowing it to sit and rise again for another hour.

On a lightly floured surface, begin stretching the dough out into a round, pie shape pulling from the center of the dough ball working your way out. Use a rolling pin to flatten down the dough until it is about a quarter of an inch thick, unless you prefer thicker or thinner crust, of course.

Using a toothpick or a fork, poke some holes throughout the dough to avoid bubbles from forming as it is baking.

Now you are ready to add your sauce and toppings. The more toppings you use the longer the bake time will be. For two toppings, bake your dough for about 20 minutes, or until the crust turns a light brown color, and then enjoy your homemade pizza.

You will never want to order take-out again using a simple yet tasty pizza dough recipe that everyone in the family will love. Experiment with different pizza recipes varying the toppings, sauces, and types of dough you use to create interesting and flavorful creations.
