Cut the 2 muffins in half. Top with pizza sauce, grated cheese, chopped ham, and eggs. Place under toaster oven for a little or two. Adjust settings to your liking. Offer your child a piece of fruit on the side.

There are many variations of fruit salads and really, they are great anytime of the day...not just for breakfast. Fruit salads are exquisite with some non-fat yogurt dip.

Breakfast Casseroles

There are many types of casseroles for breakfast. And to make them healthy, you can add any kind of veggies you like and is very recommended to add to your daily intake of vegetables. Using turkey bacon or sausage and low fat cheeses is ideal when it comes to wholesome casseroles. Also using an egg substitute such as egg beaters will give you less fat and cholesterol. With casseroles, you can make them ahead the night before and pop them in the oven in the morning.

Last little Breakfast

Delicious Belgian Breakfast Recipes!

Fines Herbs Belgian-Style Breakfast Bread

8 tbsp unsalted butter, at room temperature
2 tsp finely chopped minced garlic
2 tbsp Fines Herbs
1 tsp salt
1 tsp freshly ground black pepper
1 loaf French bread or Italian bread (or 2 smaller loaves)

1. Preheat oven to 375 degrees F.

2. In a small bowl, mix together the butter, garlic, Fines Herbs, salt,

and pepper well.

3. Slice the bread 1" thick but do not cut all the way through the bottom

of the loaf.

4. Spread approximately 1 to 2 tsp of the garlic butter in between each

cut.

5. Wrap the bread in aluminum foil and bake about 10 minutes.

6. Serve immediately.

Belgian Waffles

Use Maple Flapjacks mix (bag), except when combining ingredients only add 1/2 cup of milk to the dry mix, along with 2 eggs and 2 tbsp vegetable oil.Then bake in a waffle iron for 4-5 minutes or until golden brown.

Traditional Belgian Waffles are topped with fresh strawberries and whipped cream. For your own individual twist, try putting chocolate chips, blueberries, or bacon into the mixture and baking them into the waffles in the waffle iron. Or simply top your waffles with these or other ingredients for a unique taste.

With the frequency that people have reflux problems through the night while they are sleeping, chances are they are waking up with heartburn. And you can adapt to some changes in food choices that will help you even more - you really don't need to eat that last piece of cold pizza for breakfast to keep it from going to waste J

Good food choices will include whole-grains, fruits and vegetables, and protein - just like any well balance healthy meal. In fact, that is one of the major benefits of an acid reflux diet, besides helping prevent or getting rid of heartburn, it is also a diet that promotes good health.

Whole grain breakfast food choices can be found in oatmeal, whole grain cereals, or whole grain breads. These are important for your acid reflux diet. They have fiber which makes them easier to digest, they don't require as much acid during digestion, and actually they break down during digestion in a way that can absorb excess acid. Additionally, whole grains include the antioxidant selenium, which has been shown to help protect the cell lining in the esophagus.

This means skim milk instead of whole milk, egg whites instead of the whole egg - and no more of that bacon or the fatty meats and fried foods in those breakfast sandwiches.

Breakfast And Lifestyle Changes

My lifestyle has changed the last few years; I was gaining weight as I was getting older, and I had heartburn that became acid reflux disease. Besides making some very big acid reflux diet changes, it now includes going to the gym in the morning before starting work. So, breakfast is very important to me after working out, but I also lose some extra time that I could have had for eating.

I eat a banana on the way to the gym, which helps settle my stomach. And then for breakfast I want a lot of protein, and to be sure that I have a relatively high protein to carbohydrate ratio; I want energy and not a spike in my blood sugar level. I usually drink a vanilla protein powder shake, and eat a cup of Greek yogurt [it is low-fat and has extra protein], and an apple - delicious.

I feel very good throughout the morning, and with no more coffee and diet coke to 'help' me through - if I want something else to eat, I have another apple. Breakfast is very important to our health, and you have lots of food choices that not only won't cause heartburn, but can actually help control it. But like in the case of all acid reflux diet choices, there are tradeoffs and lifestyle changes to be made to get rid of heartburn, and to get health benefits from what we eat -vs- eating in a way that makes heartburn become worse, and lead to acid reflux disease.

Not Eating Breakfast Leaves Your Brain Craving High Calorie Foods

You may have already heard that not eating breakfast, often called the most important meal of the day, isn't a good idea if you're trying to lose weight. But in the rush to get out the door in the morning, many of us just don't have the time, even though studies have shown those who eat breakfast stay slimmer and consume fewer calories during the course of a day.

Now new research has hit upon the explanation.

The work involved 20 healthy, non-obese subjects who skipped breakfast before a fMRI scan.

During the test, the subjects looked at photos of both high and low calorie foods. High calorie choices included pizza, chocolate and cake. The low calorie foods were things like veggies, salad and fish.

Using scans known as function magnetic resonance imaging (fMRI) that help doctors look at blood flow in the brain and how it increases in response to brain activity, the researchers were able to compare how breakfast eating vs. breakfast skipping affected the reward center of the brain.

The reward center is known to be a part of the brain involved in keeping track of the pleasure and reward that comes from food, as well as igniting the motivation to eat. The taste, smell and sight of food also serve to activate these reward centers.

What the team found was that the reward center of the brain of the breakfast skippers lit up more vividly when these subjects saw a high calorie food as opposed when they were looking at a healthier alternative.

High calorie foods also were on top of the list of favorites the breakfast skipping subjects listed when asked to rank foods they found most appealing.

Just the opposite was true when it came to the subjects who ate breakfast first, then had the fMRI 90 minutes later.

This time, the reward center of the brain didn't show any greater activity at the sight of the high calorie foods as when looking at the low calorie ones. What's more, the subjects didn't rate the higher calorie foods any more appealing than the lower calorie ones.

"Our results support the advice for eating a healthy breakfast as part of the dietary prevention and treatment of obesity," says Tony Goldstone, MD, PhD, a consultant endocrinologist with the MRC Clinical Sciences Centre at Imperial College, London.

"When people skip meals, especially breakfast, changes in brain activity in response to food may hinder weight loss and even promote weight gain."

Skipping breakfast causes your metabolic rate to slow down while your blood sugar also drops.

This brings on feelings of hunger that set you up for impulse eating later on in the morning, at lunch or dinner.

Eating breakfast at the start of your day gives the body the fuel it needs to feel satisfied, so that you're less likely to overeat, or eat on impulse for the rest of the day.

Here are some quick-to-make, healthy breakfast suggestions to try:

- Milk and whole-grain cereal
- Instant oatmeal topped with raisins and milk
- Whole-grain granola topped with fruit and yogurt
- Peanut butter on whole-wheat toast or a bagel
- Fruit smoothie made with yogurt
- Cheese and whole-grain crackers
- Energy bars so long as you read the labels - some of these have little fiber and as many calories as a candy bar.

Future studies in this area might even uncover ways to prevent the activation of the brain's reward center so that high calorie choices don't seem so appealing.

Healthy Breakfast Recipes

o Banana-Bran Muffins

These muffins are a great breakfast filler and sure to keep you going throughout the morning.

Makes 1 dozen muffins

Ingredients:

2 large eggs
2/3 cup packed light brown sugar
2 medium mashed ripe bananas
1 cup buttermilk
1 cup unprocessed wheat bran
1 cup whole-wheat flour
3/4 cup all-purpose flour
1 ½ teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 cup canola oil
1 teaspoon vanilla extract
1/4 teaspoon salt
1/cup chocolate chips (optional)
1/3 cup chopped walnuts (optional)

Method:

Preheat the oven to 400°F. Coat 12 muffin cups with cooking spray.

Whisk the brown sugar and the eggs in a bowl until smooth. Whisk in the bananas, wheat bran, buttermilk, oil and vanilla.

In a separate bowl mix together the whole-wheat flour, all-purpose flour, baking powder, baking soda, cinnamon and salt. Make a well in the center of the dry ingredients and add the wet mixture to it. Use a rubber spatula to combine the ingredients. Stir in the chocolate chips, if using. Spoon the batter into the muffin cases until they are rather full and sprinkle with the walnuts, if using.

Bake for 15 to 25 minutes or until the tops are brown and they spring back when touched.

Allow to cool in the tin for 5 minutes before removing to a wire rack.

Makes 1 serving

Ingredients:

1 large egg
1 egg white
1/2 teaspoon hot sauce
Freshly ground pepper
1 tablespoon chopped spring onions
1 tablespoon chopped parsley (optional)
2 tablespoons black bean dip
1 9-inch whole-wheat wrap
1 teaspoon canola oil
2 tablespoons grated cheddar cheese
1 tablespoon green or red salsa (optional)

Method:

Set your oven rack 6 inches from the heat source and preheat the broiler. With a fork, briskly mix the eggs, hot sauce and pepper together in a medium bowl. Stir in the spring onions and parsley.

Warm up the black bean dip in the microwave for 10 to 20 seconds. Place the wrap between paper towels and heat in the microwave for 10 to 20 seconds. Spread the bean sauce over the wrap, leaving a border of 1 inch.

Brush a 10-inch non-stick skillet with oil and place onto a medium heat. Add the egg mixture and cook, lifting the edges with a spatula until the bottom is light brown in color. Place the skillet under the broiler until the top of the egg mixture is set. Once it is cooked, place the omelet onto the wrap. Sprinkle with cheese, fold the edges over the omelet on two sides and then roll the wrap around the omelet. Eat immediately with salsa.

This healthy breakfast recipe can be prepared in advance and then simply placed in the oven for a delicious breakfast. The calories of this breakfast are decreased by using nonfat milk rather than whole milk and eliminating the egg yolks. The fat is also reduced by almost 80% with this griddle version.

Makes 12 servings

Ingredients:

3 cups nonfat milk
2 cups pasteurized liquid egg whites
3 tablespoons honey
1 ½ teaspoons vanilla extract
1/4 teaspoon salt
One 1 pound loaf sliced whole-wheat bread
1 cup chopped dried apples
1/2 cup raisins
1 ½ teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon confectioners' sugar

Method:

Whisk milk, egg whites, honey, salt and vanilla in a large bowl.

Trim the crust off the 8 slices of bread and set aside. Cut the crusts and the remaining bread into 1 inch pieces. In another large bowl place the apples, raisins, nutmeg and cinnamon and toss together.

Use cooking spray to coat a 9 by 13 inch baking pan. Place the bread mixture into the pan and lay the reserves crust-less slices evenly on top. Pour the milk mixture over the bread and press the bread down with a wooden spoon to ensure that it is all evenly moist. Cover with parchment paper, then foil, and refrigerate for at least 8 hours.

Preheat the oven to 350°F.

Bake the casserole for 40 minutes covered, then uncover and continue baking for approximately 20 minutes more until it has puffed up and is lightly browned. Allow the dish to stand for 10 minutes. Dust with confectioners' sugar and serve.

Heat a skillet over a medium high heat and brush it with oil. Ladle some of the batter into the hot skillet and cook it until there are little holes. Flip the Mexican pancake and brown the other side.

Repeat this until you have used all the batter. Serve the pancakes with sour cream and mild tomato salsa.

Easy Quinoa Breakfast Recipes

There are plenty of easy quinoa breakfast recipes that you can find online but I'll only share 3 of my favorites. Quinoa is so versatile that you can practically add anything to it without overpowering the other ingredients.

One of my favorite breakfast recipes is the nutty cinnamon quinoa recipe. You will need a cup of low fat milk or skim milk, a cup of water, a cup of quinoa (well-rinsed), 2 cups fresh blueberries or strawberries, ½ teaspoon finely ground cinnamon, 1/3 cup chopped pecans (or any nut that you prefer) and 4 teaspoons organic nectar.

This is so easy to make, all you have to do is boil the milk, water and quinoa in a saucepan over high heat and then reduce the heat to medium-low, cover and simmer for 15 minutes or until most the liquid is absorbed. Turn off the heat and set it aside for 5 minutes while covered. Mix in cinnamon and blueberries and top with the chopped nuts. Drizzle with nectar and serve.

Another easy quinoa breakfast recipe that I like is the hot quinoa breakfast cereal. You will only need a cup of cooked quinoa, thinly sliced apples, seedless raisins, dash of cinnamon, milk and honey. Mix all the dry ingredients together and serve with milk. You can add honey or low-calorie sugar to taste.

The last easy quinoa breakfast recipe that I found is the peanut butter quinoa recipe. For the ingredients, you need a cup of quinoa, 2 to 3 tablespoons of butter, 2 cinnamon sticks, 2 tablespoons of sugar, 1 cup of milk, roasted pecans, raisins or dried cranberries and any fruits of your choice (bananas, strawberries, peaches).

Boil the quinoa with milk, sugar, cinnamon sticks and peanut butter. Reduce the heat to low until the milk is absorbed. Set it aside and cover it for 5 minutes. Add all the ingredients and serve. Now that's easy right?

There are so many choices for the most prominent meal of the day but when it comes down to it, these are my top 5 beloved morning meal recipes. Although they are numbered, they are in no special beloved order.

Breakfast Pizza

1) Potato Pancakes.

This morning meal formula is a for real great ease food. With the potato flavor, its taste is just satisfying. There are so many options and depending on how I feel, there are just so many things I can do with it. If I am in the mood for something sweet, I would add some apple sauce or syrup.

However, if I am finding for a more savory dish, I would add some sour cream or cream of mushroom soup as the topping. Even without anyone on the side, potato pancakes make for a nice starter in the morning.

2) Hashbrown Casserole

I love hashbrown casserole because it combines all the goodness a hashbrown has to offer with cheese, chicken, sour cream, and other appetizing additions. For days that I need a big morning meal with distinct classifications of food, this would be the one.

Make this formula the night before and just heat it up whether in the oven, if you have time, or in the microwave, if you are running out the door.

3) Eggs Benedict

This is one of my favorites because there is just so much that goes into Eggs Benedict. It isn't your typical eggs and toast morning meal because this one has a poached egg on top of an English muffin and is topped off with Hollandaise sauce.

Not to mention the goodness that the cheese and ham or Canadian bacon can add to the ensemble. No doubt it is the excellent combo of morning meal ingredients.

4) Belgian waffles

Waffles are great because they are crispy and it is yet other formula that I can experiment with. Belgian waffles are easy to make and there are so many things that go great with it like cream, fruit, or butter.

I tend to like the relax food options, so if I were choosing for an entire week, I might chose: the Cajun chicken and sausage with fat and sugar free pudding; the lasagne and meat sauce with a salad; the pizza and strawberries; the beef steak with potatoes and cantaloupe; the bar b que pork wrap with celery sticks and fat free dressing; the macaroni cheese and beef with sliced tomatoes; and the mushroom risotto with sliced red peppers.

7 Tasty Snacks: You certainly can't go wrong with any of the snacks. But, here are seven of my favorites: the nachos; the pretzels; the herb snack mix; the cheese puffs; the bar b que chips; the coconut almond bar; and the chocolate rainbow desserts.

A Week's Worth Of Desserts: This isn't going to be very original, but the desserts are my favorite. I certainly can't think of one that I wouldn't eat, and I pretty much like them all. If I could only chose 7, I'd pick: the almond biscotti; the chocolate cake; the peppermint cookie patty; the nutrichocolates; the golden pound cake: the blueberry lemon sweetmeat bar; and the mint chocolate crunch bar.

All of the meals are meant to be interchangeable. And, nutrisystem does allow for you to buy foods individually, by the week, and by the month. The monthly packages regularly work out to be cheaper because you're buying in bulk and because they allow for you to use the most kind coupons with the monthly packages.

Fruity Granola Yogurt Parfait

Ingredients:

1/2 granola 3/4 cup vanilla or plain yogurt 1/2 cup fresh blueberries, raspberries, or sliced strawberries or bananas You can use icy if fresh is not available Measure out all ingredients to be used Provide stemware or clear drinking glass or bowl Layer ingredients any which way you choose In the glass add half of granola, yogurt, and fruit, then repeat Eat with a long spoon

Note: Commercially ready granola is often toasted with oil and honey, development it high in calories.

Sticky Carmel Pecan Rolls

Ingredients:

1/4 cup fat-free caramel flavored sundae syrup Cooking spray 1 can refrigerated reduced fat crescent dinner rolls 1/4 cup firmly packed brown sugar 2 tablespoons finely chopped pecans 1/2 teaspoon ground cinnamon
Instructions:

1. Preheat over to 375 degrees

2. Coat muffin cups with cooking spray

5. Unroll dough: cut off into 4 rectangles

6. Combine brown sugar, pecans and cinnamon

7. Sprinkle sugar combination evenly over each rectangle

8. Press combination gently into dough

9. Beginning at 1 long edge - roll into 6 slices

10. Pinch ends of dough to seal

11. Cut each roll into 6 slices

12. Place 3 slices, cut sides down into ready muffin cups

13. Bake at 375 for 14 minutes

14. Run knife around edges of cups; invert into a platter

Makes 8 servings - fat 172

Breakfast Pizza formula with Strawberries

Ingredients:

1 holder (10-count size) refrigerated biscuits 1 Orange 1 holder (8 ounce size) light cream cheese, softened 5 teaspoons Honey, divided 1/2 liter Basket fresh strawberries, stemmed and halved
Instructions:

1. Preheat oven to 400F

2. Stack 2 biscuits

3. Roll biscuits out to a 6-inch circle, 1/8-inch thick

4. Place on un-greased baking sheet

5. Prick all over with fork

6. Repeat with remaining biscuits to make 5 circles in all

7. Bake until golden, 6 to 8 minutes; loosen and cool slightly

8. Finely grate peel from orange

9. In bowl concentrate cheese, orange peel plus 3 teaspoons of the honey to blend

10. Set aside

11. Juice orange into large bowl

12. Add strawberries and the remaining honey

13. Toss

14. Increase oven temperature to 425F

15. Spread biscuits with cheese to within 1/2 inch of edges

16. Bake until cheese edges brown lightly

17. Top with drained strawberries. Serve warm

Let's take a look at these excuses:

I'm not hungry in the morning.

Yes you are. Your body is starving for power first thing in the morning. You have not eaten in 10-14 hours. How could you not be hungry. You have trained your brain to believe you don't want food when you first wake up and your brain has appropriate the starvation technique so it no longer sends you the hunger signals that early.
But, did you know that your body will not start aggressively burning fat until you add some food in the morning. If you wait until lunch before you eat, you have wasted half a day of calorie burning where your body has been trying very hard to conserve power and not burn any fat. This is why you are feeling sluggish. By not eating breakfast, you are contributing to your weight qoute in a Big way.

If I eat breakfast, I am hungry again before lunch.

Good, you should be. This is proof that your body is doing it's job and burning those calories. As long as you keep feeding it, it will keep burning. Eat-eat-eat... This is how to lose weight. These three make - ahead breakfast Casseroles are crowd and house pleasers and are very easy to prepare. The first is a variation of a casserole from a Bed and Breakfast, the second one is a variation of a recipe from Allrecipes.com and the third is an old house favorite. All have been enjoyed by many folks and the recipes have been requested countless times.

Breakfast Pizza

Green Chile Strata

Ingredients

2 cups milk 2 cans chopped green chili 4 cups grated Colby-Jack cheese 5 eggs, beaten 1 Tbsp. Ground cumin 1 tsp. Oregano 1 tsp. Salt 3-6 flour tortillas
Spray the lowest of 9x13" baking dish. Cover lowest of dish with tortillas. You may have to cut them to fit. Sprinkle with half of the chili and cheese. Repeat the layer. Incorporate the eggs, milk salt and seasonings. Pour over layered ingredients. Refrigerate overnight. Bake at 350 degrees for 30 minutes.

4 baking potatoes 1 pound ground pork sausage 2 Tbsp. Butter 1 onion, diced 2 tsp. Seasoned salt 1/2 tsp. Dry mustard 1/2 tsp. Salt Black pepper to taste 1 1/2 cup grated cheddar cheese 12 eggs, beaten 1/2 cup milk
Bake potatoes for 30 minutes in a 350 degree oven. Remove from oven, cool, peel and cut into cubes.

Cook sausage in medium saucepan over medium heat until browned, drain fat. Remove to a plate. Melt butter in saucepan and add onion and potatoes. Cook until lightly browned and onion is tender, about 10 minutes. Sprinkle with seasoned salt.

Place potato composition in a greased 9x13 baking dish. Cover with sausage. Sprinkle cheese over top.

Beat eggs with mustard and milk. Add salt and pepper and pour over the composition in baking dish.

It can be baked at 350 degrees for 30 minutes or refrigerated overnight and baked for 40 minutes or until eggs are set.

6 slices bread, buttered and cubed 1 1/2 pound ground sausage 9 eggs 3 cups milk 1 1/2 cups grated sharp cheddar cheese 1 1/2 tsp. Salt 1 1/2 tsp.dry mustard
Cook sausage until browned and crumbly. Drain and set aside. Beat eggs with milk, salt and mustard. Layer bread cubes, sausage, and grated cheese in a greased 9x13 inch baking dish. Pour egg composition over all. Refrigerate overnight. Bake at 350 degrees for 45 minutes until eggs are set.

The Best breakfast in the World

The best morning meal in the world sounds like a motto dreamed up by a slick city hotel to drum up firm for the first meal of the day. The first step is to make sure you have all the ingredients you need. You will need to buy sugar cookie mix of whatever brand you prefer. That is what makes up the pizza crust. Next, you will need to get the sauce. I commonly use cream cheese, preferably whipped, because it is easier to spread on the crust. If you are going for more of a desert pizza than a breakfast pizza, you can interchange it with cream cheese icing. Both ways are delicious. You will also need to buy fresh fruit, which will be the toppings on your pizza. I propose strawberries, blueberries, and kiwis, but any fruit will suffice.

The second step is to cook the crust. Depending on what kind of cookie mix you get, the establishment may vary. Betty Crocker Sugar Cookie mix requires one egg and a half cup of butter to be added to the mix. Follow the directions on holder of your cookie mix. Then spread the dough into a pizza pan. The directions should tell you either you need to grease the pan. Try to spread it evenly throughout, but don't worry if it doesn't look very high; it will rise while baking. Bake as the directions say, or until the edges are golden brown. Then take it out to cool.

The last step is putting together the pizza. While it is cooling, you can cut your fruit. Small slices are best. Once you think your crust has fully cooled, ice it with the sauce of your choice. Then take the fruit slices and place them where you want them on the pizza. You can do a ring of one type of fruit and then another, forming a pattern. Alternatively, you can just place the pieces sporadically. If you know that some of the population who will be eating the pizza like strawberries but not blueberries, or any incompatibility of liking one fruit and disliking another, you can do the pizza half and half, or make sections.

Now your pizza is finished, and ready to be enjoyed. You can bring it to a party or get together to share with friends, or just have it as a nice snack for yourself. As you can see, development a breakfast pizza is quick and easy, and by all means; of course worth the effort.

When Breakfast Is More Than A Meal

Because mornings are often hectic, some families try to get by with skimpy breakfasts or skip the meal entirely. You and your children, though, have already gone without food for 8 to 9 hours. Without a good breakfast, your bodies and your brains - which have no blood-glucose reserves, the brain's main energy source - have even longer to wait for an energy boost. For either adults or children, a good breakfast should include a grain food, a protein source, a low-fat milk food and your choice of a fruit or vegetable or juice.
For the protein food, nutritious eggs are quick and easy to prepare and go well with other foods to complete a balanced meal. Pile-It-On Egg Toast, for example, can help you wake up taste buds with either a comforting or more exciting flavor combination.
Pile-It-On Egg Toast
3 servings
Cooking spray
3 slices bread
3 eggs
Topping ingredients (see variations)
Cover baking sheet with aluminum foil. Evenly coat with spray. Place bread slices on foil-lined sheet. With 2 1/2- to 3-inch round cookie or biscuit cutter or inverted drinking glass, cut out center of each bread slice. OR, pull out center of bread slice with fingers, leaving 2 1/2- to 3-inch diameter hole. Place cutouts and bread slices on baking sheet. For extra crispness, lightly coat both sides with spray, if desired. Break and slip 1 egg into hole in each bread slice. Evenly spread or spoon topping ingredients over bread slice and egg white. Avoid covering egg yolk completely.
Place baking sheet on middle rack of preheated 350 degree F oven. Bake until whites are set and yolks begin to thicken and cloud over, but are not hard, about 12 to 15 minutes. (Baking time may vary depending on temperature, amount and thickness of topping foods and exact diameter of hole in bread slice.)
Nutrition information per serving of 1/3 recipe using pumpernickel rye bread, ham, spinach and 2% cottage cheese: 200 calories, 8 gm total fat, 228 mg cholesterol, 743 mg sodium, 229 mg potassium, 14 gm carbohydrate, 17 gm protein and 10% or more of the RDI for vitamins A, B12 and C, niacin, riboflavin, thiamin, iron, phosphorus, zinc
Topping Variations: Each variation makes 3 servings.
Ham & Cheese: Use pumpernickel rye bread. In small bowl, stir together 1 cup fresh baby spinach leaves (about 1 1/2 oz.), 1/2 cup chopped lean cooked ham (about 3 oz.) and 1/3 cup low-fat cottage cheese. Spoon about 1/3 cup spinach mixture evenly onto each egg-and-bread slice. Bake.
Mushroom Pizza: Use Italian bread, at least 4-inches in diameter, sliced 3/4- to 1-inch thick. In small bowl, stir together 1 cup sliced mushrooms (about 3 1/2 oz.) and 1/2 cup prepared pizza or spaghetti sauce or salsa. Spoon about 1/3 cup mushroom mixture onto each egg-and-bread slice. Sprinkle with 3 tablespoons shredded low-moisture, part-skim mozzarella cheese, 1 tablespoon per slice. Bake.
