Homemade Pizza Dough

Do you want to make homemade pizza dough from scratch with your favorite toppings? What about some garlic butter or butter parmesan crust just like at the pizza parlor? Worried that you won't be able to make your own crust and have it taste as good as the restaurant? You can - and it won't even take that long. This picture is the pizza we had for dinner tonight!

Making good food is trial and error, especially when you're going to make something from scratch. I've made homemade pizza hundreds of times. I've made it using frozen pizza crust, boboli (pre-made and baked) pizza crust, and (dry mix) pizza crust in the box. I've even made homemade pizza crust with wheat, semolina, and white flour. This recipe is a combination of all I've learned over the last 25+ years of making pizza at home. This recipe makes 2 large pizzas.

Breakfast Pizza

What you'll need:

* 4 packets/boxes of (dry) pizza crust mix (and brand)
* 2 cups warm water (about 115 degrees)
* 1 Jar pizza Sauce
* 3 packets Sargento's Sun-dried tomato and basil mozzerella shredded cheese
* garlic powder
* Italian seasonings
* minced garlic
* Pizza toppings (pepperoni, Canadian bacon, mushrooms, onion, green pepper, whatever you like!)
* 2 large pizza pans - preferably with small holes throughout for aeration.
* 1/4 cup extra virgin olive oil

When you buy store bought pizza crust what usually happens is you mix each dry mix crust with some hot water into a ball, and then let that stick mess rise, then you smash it onto a cookie sheet and bake it with sauce, toppings, and cheese for about 15 minutes. What you get is a more like a "bread pizza" because it's so darn doughy. I've also made pizza crust from absolute scratch too - but that can take time. I've developed a hybrid of these two things that is still pretty quick, but yields a pizza crust that is just about as close as you can get to the pizza parlor as possible.

Get a large mixing bowl and put the 4 packets or boxes of dry mix pizza crust in. You can use any kind you like, Robin Hood or Jiffy are both great. Next add about 2 tbsp of garlic powder to the bowl (if you like garlic - we do!), and then add 2 tbsp of Italian seasonings. Mix up these dry ingredients, and then begin to add the 2 cups of water. The water can't be more than 120 degrees or you'll kill the yeast, but it shouldn't be so lukewarm that it doesn't grow fast enough. A good indicator is the water should be hot enough to be able to stick your finger in it - but just barely. Add the water bit by bit until it's all added and the mix in the bowl is in a ball. Spill a cup of flour out onto the counter. Place the doughy mixture on top of that on the counter, and then spill the remaining cup of flour on top.

You're going to knead the dough with the balls of your hands, push, flip, push, flip, working in the loose flour until it's all gone. It usually takes about 5 minutes to knead the flour in, and then continute to knead an additional 3-5 minutes and the dough with be a bit elastic like play-doh. Sprinkle extra virgin olive oil around the large mixing bowl, place the dough in the bowl and roll over and over until coated. Wrap the bowl in saran wrap and then place a kitchen towel over the top. I usually pre-heat the oven to 150 degrees and place the bowl on top for 30 minutes, rotate 180 degrees, and then leave another 30 minutes. In that 60 minutes the dough will double in size.

When it's ready, remove the towel and saran wrap - and punch down the dough one time in the middle of the towel. Cut the dough in half with a sharp knife. Take one half of the dough and begin to stretch it in your hands from the middle out to the edges as you slowly rotate it bit by bit 360 degrees over and over. Be careful to do it evenly and not stretch any way to thin as to make holes. Once you have it stretched to about 3/4 the size of the pizza pan, place it on the pan. Then, lifting up the edge, pull outward and stretch it towards the edge of the pan while rotating the pan around until the crust covers the entire pizza pan. Make sure that it's even all throughout the pan, and then empty 1/2 of the pizza sauce jar onto the crust, and thin it out covering the pizza with the back of a tablespoon. Use the other half of the dough and do the same with the other pizza crust and the remaining sauce.

Pre-heat your oven to 500 degrees. Prepare your pizza toppings (cut your onion and green pepper if necessary, Canadian bacon, etc). Use 1 and 1/2 of the packets of cheese on both of the pizzas. I like the Sargento cheese that's already seasoned with basil and sun-dried tomatoes - it gives the pizza a great flavor! Add your toppings, and then the remaining cheese on top.

Cook in the oven 10 minutes, then check. If the cheese is not all the way melted it may need an additional 2-3 minutes. Be careful - 500 degrees is very hot and required to get a crust like the restaurant, but just a minute or two too long and you can burn it!

Once the pizzas come out of the oven - we melt 3 tbsp of butter and 1 tbsp minced garlic in the microwave for 45 seconds, and drizzle over the crust. You can do grated parmesan instead of the garlic if you like!

Mushroom Ragout Pizza with Goat's Cheese

You will need:

3 cups white flour 1 cup warm water 1 envelope active dry yeast 1 teaspoon sugar 1 teaspoon salt 1/2 cup whole wheat flour 2 tablespoons plus 1 teaspoon olive oil 1/2 cup grated mozzarella 1/2 cup crumbed goat's cheese 1/2 lb sliced mushrooms (maybe portobello, cremini, shiitake and button mushrooms) 1 onion, diced 1 teaspoon minced garlic 6 dried porcini mushrooms Salt and freshly ground black pepper, to taste 1 sprig thyme, for garnish
How to make it:

Preheat the oven to 425 degrees F. Bake the porcini mushrooms until they are crunchy, and then let them cool down and powder them in a food processor. Set the powder to one side.

Combine the warm water and yeast and leave it for 10 minutes until it is frothy. Put the white flour, sugar and salt in a mixing bowl and pour in the yeast mixture. Knead it until you have a smooth dough, then cover the dough with cling wrap and leave it somewhere warm for half an hour to rise. Divide the dough into 2 balls and roll them over the whole wheat flour with a rolling pin.

Grease a pair of pizza pans with a teaspoon of the oil. (Omit this step if you are using perforated pizza pans).

Saute the onion and garlic in the rest of the olive oil, and then add the mushrooms and porcini powder. Season to taste. Sprinkle the goat's cheese over the pizza crust. Spread the mushroom mixture on the pizza crust, and then sprinkle the mozzarella over the top.

Bake the pizza until the dough is cooked and the cheese is golden brown, then serve, garnished with the thyme.

Restaurant Menus: A Good Menu Reflects The Personality Of The Restaurant

Restaurant Menus should reflect they style and atmosphere of a restaurant. When developing one care should be taken to provide customers with a sense of what the restaurant is all about. If the establishment is a family restaurant the menu should have family friendly entrees as well as visually appeal to those people that have families. If it is a formal restaurant the menu should have more chic entrees and the look of the menu should be more precise and conservative.

There is much more to a menu than just the items to order and the prices. Many considerations have to be made when developing a menu. Demographics are very important. Pricing wholly depends on the average salary a person or family makes within the area of the restaurant. You may notice when visiting a chain restaurant in several different towns that they have the same menu items but the prices may be different. The cost of living in an area dictates how much a restaurant can charge for an item. The same item may cost a few dollars more at a restaurant in New York City or Boston than it does in a small town in Ohio.

Demographics make a huge difference in what is to on the menu at a restaurant as well. If an area has many elderly people the restaurant may want to cater to them by giving them discounts or the menu may allow for smaller senior meals. The print on this menu may need to be a little larger to make sure the elderly can read it. If the area has families then they want to have a children's menu with family friendly food. If the restaurant is in a business district they may want to cater to business people bringing clients out for lunch or dinner and the menu would be a little more formal.

Some menus give you a huge selection of what you can order and some are very limited. They may have just a few entrees and they may change from time to time. The items on a menu are usually in groupings. A simple grouping would be Appetizers, Beverages, Entrees, Side dishes, Desserts. Some menu categories are more varied. Entrees can be classified by the ingredients in them like seafood, pasta, sandwiches, etc.

Usually a menu will start with appetizers and progress from soups and salads. It will then detail a listing of entrees and their side dishes then go on to desserts with beverages being last. Other menus will go from breakfast to lunch to dinner. Traditionally the items are placed in each section the least expensive to the most expensive. However, that may not be the most ideal way to place things on a menu. It has been proven that placing items the restaurant wants to sell first will sell more of those items. Maybe they have a specialty no one else has been able to make in a similar fashion and it appears on the menu at the top of the entrees even though it is the most expensive. The restaurateur wanted people to order it so it was placed first on the menu.

Illustrations are essential for some menus including a family menu so the children who cannot read yet can pick by picture. People like to see illustrations and photos of the food they will be ordering. There are many places that one can get stock pictures or just use a digital camera. Good restaurant menus can include a description of the menu item. A more formal menu should be less graphic oriented and more word oriented. A detailed description should be included and some restaurants go as far as placing words from the chef or the pedigree of a dish.

The color of the menu should reflect the personality of the restaurant. A red and white checkered tablecloth might be a great background for an Italian restaurant menu. A brightly colored menu is good for a family restaurant. A classic black and white menu exudes formality for an expensive classic restaurant. The font should follow in the same manner. Use scrolling letters for classic restaurant but stay away from font with too many curlicues for a family restaurant as it is a little hard to read. Parents with hungry kids want to see what is on the menu and order it as fast as they can. Menus that have more than two columns tend to look like they were printed at the local newspaper so stay to no more than the two columns.

Menus come in different shapes today instead of the plain rectangular type that open to a square. A pizza restaurant can have a menu in a circle just like the pizza if they choose to. If the menu looks clean and tidy people will automatically think the restaurant is the same way. If the menu looks like fun and contains some fun filled quips about the food people will automatically think that in coming to that restaurant they will have fun. Design of a menu has a great deal to do with how the public thinks about the restaurant.

Menu items that are popular should be placed in the top left panel of the menu. This is where the eye goes when first opening the menu up. If there are daily specials, this is the place to put them. If the restaurant has a signature dish or two, this is the place of prominence where all eyes will see them. Prices should be placed in different areas after a description of an item. Placing them in a column makes it so that customer does not have to read the descriptions. They just look at the prices to see what is the cheapest dinner.

A good menu reflects the personality of the restaurant and leads customers to entrees that are popular and successful. A good menu has just enough description to wet the appetite and not to bore the reader. A good menu is easy to read and customers will remember the basics of what was on it several days after they have seen it. A good menu has a either pictures or descriptions that will tell the customer exactly what they are getting. Most important a good menu is priced right as to the area and gives the customer a great deal for good food.

Breakfast Boots Metabolism and Burns Fat

When you skip breakfast, your metabolic rate slows down and your blood sugar drops. (Remember - by breakfast time you probably haven't eaten for around 12 hours). To help you survive, your body slows your metabolism to ensure that what fat stores you do have last as long as possible. This is often called "survival mode."

Your body is essentially running on fumes by the time you get to work which sends you desperately seeking sugar, which is usually pretty easy to find. If you don't replenish at breakfast, you become hungry and have less energy. Which sets you up to impulsively snack through the morning - often on high-fat sweets - or if you manage to make it to lunch more than likely you eat extra servings or bigger portions.

By eating a proper breakfast, you are telling your body that it is all well there is plenty of food available, and there is no need to store excess fat. Your metabolism doesn't slow and therefore your metabolism is boosted helping to burn excess calories.

Eating breakfast every day may reduce the risk for obesity and insulin resistance syndrome - an early sign of developing diabetes - by as much as 35 to 50 percent, according to a study. Whole-grain cereal is the best choice for weight loss, weight control and improving health.

A Harvard study found that those who ate whole-grain cereal every day were 20 percent less likely to die from cardiovascular disease, than those who "rarely or never" ate whole-grain cereals. Look for cereals that list whole grain or bran as their first ingredient and contain at least 2 grams of dietary fiber per serving. Bran cereal and oatmeal contain at least 7 grams per serving, or about 25 percent of the recommended daily intake.

Try to choose foods from at least two or more food groups. Protein foods take longer to digest and will provide sustained energy and keep you feeling full longer. Here are quick, tasty and nutritious choices to get your day off to a good start:

- Low fat Milk and whole-grain cereal
- Instant oatmeal topped with raisins and milk
- Whole-grain granola topped with fruit and yogurt
- Peanut butter spread / light cream cheese on whole-grain toast
- Fruit smoothie made on low fat milk with yogurt ( protein Powder will also feed your muscle)

A Study was conducted at the Imperial College of London using 20 healthy, non obese people, who skipped breakfast and volunteered for a brain scan or (fMRI). Functional magnetic resonance imaging to look at how feeding behaviors affect the brains reward center.

Functional fMRI allows doctors to look at how blood flow increases in response to brain activity. During the test, they looked at random photos of high- and low-calorie foods. The high-calorie foods included pizza, cake, and chocolate.

The healthier options included vegetables, fish, and salad. The brain's reward center lit up more vividly, or became more active, when the person saw a high-calorie food as opposed to a low-calorie choice. (The taste and smell of food can also activate the brain's reward center.) However, when the participants ate breakfast and had the same test repeated 90 minutes after eating breakfast, the brain's reward center did not show any significantly greater activity when shown the high-calorie photos.

I can relate to this when I go food shopping on an empty stomach. I come home with a trolley full of junk and as I am unpacking I'm thinking to myself " Hello what were you thinking", but when I have eaten I find it much easier to stay focused on the task at hand and make much better choices.

"Our results support the advice for eating a healthy breakfast as part of the dietary prevention and treatment of obesity," Tony Goldstone, MD, PhD, a consultant endocrinologist with the MRC Clinical Sciences Centre at Imperial College London, says in a statement. "When people skip meals, especially breakfast, changes in brain activity in response to food may hinder weight loss and even promote weight gain."

Researchers hope the findings could one day lead to the development of weight loss medications that target the brain's reward circuitry and disrupt the craving bias between high-calorie and low-calorie foods. Hope you have a great day and remember start it with Breakfast!

Pizza Margherita Recipe (enhanced)

This recipe is for a basic 14 inch Pizza Margherita, but you can easily add further healthy toppings such as tuna, chicken or extra lean beef (raw meat to be marinated and precooked). Because you make it yourself you know and control what goes into it. The manufacturers recommended daily amount of miniCol Cheese is 65 grams per person, so the recipe contains 130 grams - enough for 2 servings.

You have two choices for the base - you can either make your own using one of the excellent home bread making machines now available, or buy a pre-made pizza base from the grocery store.

Pizza Ingredients

Dough (enough for 2 Pizzas)

Water - 1 cup Strong Bread Making Flour - 3 Cups Dried Milk Powder - 2 Tablespoons Sugar - 2 Teaspoons Low Sodium Salt Substitute - 1 Teaspoon Yeast - 2 ½ Teaspoons

All you need to do to make the dough is to throw all these ingredients into the breadmaker and hit the 'pizza dough' button. An hour or so later you will have a ball of dough ready to roll into a pizza base.

Rest of Pizza

Tomato Paste Tube 4 cloves of garlic - finely chopped 1 Teaspoon of Ground Black Pepper Mixed Herbs - 2 Tablespoons 1 Onion - chopped 2 tomatoes- sliced 1 onion - sliced 1 Green Capsicum - sliced Olive Oil 130 grams of 'miniCol' cheese - grated
Assembling and cooking the Pizza

Cut the dough ball into 2 halves. You can freeze one half for another time. Spread some flour onto the worktop and coat the dough Use a rolling pin and roll out the dough to the size of the Pizza cooking tray Spread a small amount of Olive Oil onto the pizza baking tray and rub around with some kitchen towel (this will stop the base from sticking) Place the pizza base onto the baking tray Spread Tomato paste from the tube evenly around the pizza base Sprinkle the freshly chopped garlic evenly into the tomato paste Assemble the tomato, onion and capsicum slices evenly around the pizza base Sprinkle the black pepper over the ingredients Spread the grated cheese over the top of the ingredients Sprinkle the mixed herbs onto the top of the cheese - done

The completed Pizza should be baked in the oven at 200 degrees for approx. 10 minutes and served with fresh salad and a glass of red wine.

Good Hotels in Miami Beach can be Found

You can definitely save some money by staying at places such as Beach Place Hotel, Howard Johnson and the 60 6 Resort. If your goal is concentrated on saving money, not the general experience, I would like to suggest the 60 6 Resort, found 2 blocks from the beach, and 3 miles from the top of the range shops of Bal Harbour and the Lincoln Road pedestrian mall.
It has got a nice fitness center and this is found in a reasonably quiet part of the beach. I wouldn't stay at the Now, if you happen to be looking for overall experience, I might go with the Sea View Bal Harbor Hotel found on Collins. It's a pretty hotel, art deco, 1920s style, and really quiet and romantic. The hotel stands in a quiet neighborhood of condo towers one block from Bal Harbor Shops, and about 7 miles of the convention center, the Jackie Gleason Theater and South Beach. Miami Global airfield is about 18-20 miles away. The lobby is beautiful! It has green marble flooring, trimmed in dark wood and has a really beautiful crystal candelabrum. The hotel offers business services, wireless Net access and meeting space. And you absolutely need to try the heated pool!

Very Easy Pizza Dough Recipe

Pizza is a world-famous cake, originated from Italy. Having a long rich history, pizza is the most preferred food in every corner of the world. Today, thanks to cultural diffusion, pizza varies from cooks to cooks, from countries to countries. Here is a very easy pizza dough recipes.

Ingredients:

Breakfast Pizza

- 1 tablespoon dry yeast
- 1 cup warm water
- 31/2 cups flour
- 1 teaspoon salt
- 1 teaspoon honey
- 1 teaspoon olive oil
- 1 teaspoon white sugar

Process:

To begin with, put yeast, salt, honey and olive oil in a warm water bowl (it is estimated to be at 80 to 110 degree F). Then mix them well. Secondly, put the flour into another large bowl. Then, pour the mixture in the center of the flour bowl. Stir them well to be sure that all the ingredients are well-mixed. Now, it is time for the by-hand task. Knead the dough thoroughly until it is smooth. If your dough cracks, you might add more water, then once again, repeat kneading. If your dough sticks your hands, add more flour and continue kneading. Beat them well until a stiff dough has formed. You can check the pizza dough's elasticity by throwing it in the air then quickly catching it without leaving any dent in it.

Next, cover the dough with a plastic bags and place it in a dry area. Let it stand for half an hour to an hour, or even more. This process does not totally depends on the time but temperature of the surroundings. It is the eye to fulfill the process when the dough is seen to be doubled its original size. Here comes the toppings. As long as you are keen on cheese, mushroom, sausages, etc, just put them on the top. When you come to baking your pizza dough, the temperature to recommend is 230 degree Celsius. Here is a small tip for you: Your dough should be put on the upper layer of the oven as it would receive better heat than the base one. Don't forget to check for the doneness by checking the dough's side. If it has golden brown, it is well done.

Delicious, Healthy Mexican Pesto Pizza Recipe

Let's face it, pizza is delicious and most likely a weakness of practically everyone. Even though we all love pizza, we also know that it is not the healthiest food for us. Just think about it, the excessive grease and the high fat content. It's frightening to say the least. Here is a recipe for a healthy alternative to the typical pizza shop slice. This recipe uses various nutritious foods including chia seeds. Chia seeds are a delicious superfood. Their use dates as far back as the Mayan, Aztec, and Incan times where they were a staple of the diet. They are high in antioxidants and omega 3's,6's, and 9's - all necessary to your daily diet. This one ingredient will add great nutritional benefit.

Mexican Pesto Pizza
Pesto:
2 Tbps. Navitas Naturals Hemp Seeds
1/4 Cup Pumpkin seeds
1/2 Cup Cilantro, tightly packed
2/3 Cup Baby spinach, tightly packed
1 Clove garlic
1/2 Jalepeno pepper, deseeded
1/3 Cup Hemp oil (or olive oil)
2 Tbsp. Lime juice
1/2 tsp. Sea salt

Breakfast Pizza

Crust:
1 Tbsp. + 2 Tbsp. Navitas Naturals Chia Seeds, divided
1/3 Cup Rice milk
1 Cup Brown rice powder
1/4 Cup Mashed black beans
1 tsp. Baking powder
1/4 tsp. Sea salt
1/4 tsp. Garlic powder

Toppings:
1-2 Medium heirloom tomatoes (sliced thin lengthwise)
1/4 Cup Chopped cilantro

Directions:
Crust- Preheat the oven to 400 degrees. Combine all of the ingredients for the crust in a large mixing bowl, setting aside the 2 Tbsp. of Chia seeds. Gather the dough into a ball and knead it for one minute. After kneading the dough let it stand for ten minutes. Sprinkle a non-stick baking sheet with the 2 Tbsp. of Chia seeds that you had set aside. Roll the dough out upon the chia seed into a 9x13 inch rectangle or similar shape. Upon the completion of rolling out the crust, bake it for ten minutes in the preheated oven.

Pesto Sauce- Combine all of the dry ingredients in a blender or food processor. Pulse the ingredients until they are finely chopped. Once the ingredients are finely chopping, slowly add the oil and process the mixture until it is fully blended together.

Assemble- Once the crust has finished baking, spread the pesto onto the crust. Top with the thinly cut tomatoes. Bake the pizza for 15 minutes. After you remove the pizza from the oven, sprinkle it with cilantro and let it stand for 2 minutes. After the pizza has cooled, cut it up using a sharp knife or a pizza cutter and serve. The recipe serves approximately 4 to 6 people.

Grilled Mediterranean-Style Pizza With Sausage, Tomato, and Feta Cheese

Grilling gives pizza that smoky flavor common with pizza baked in brick or wood fired ovens. There mild and hot varieties of Italian sausage, as well as those that are sweeter in flavor. 1 (14 ounce) Pre-Baked Pizza Crust
2 tablespoons Garlic Flavored Extra Virgin Olive Oil
2/3 cup Pizza Sauce
1 cup shredded Italian Cheese Blend
1/2 cup crumbled Feta Cheese
1 Vine-Ripened Tomato, sliced very thin
1-1/2 teaspoons Dried Oregano
1 cup Fresh Basil, chopped

Preparations:

1. Preheat gas or charcoal grill to medium high heat.
2. Place Italian sausages on an oiled grill rack set 4 to 5 inches over the heat.
3. Grill, using the direct grill method, turning individual sausages occasionally with tongs.
4. Continue cooking the sausages until well browned and cooked through, about 7 to 9 minutes.
5. Cool slightly and cut into 1/4 to 1/2-inch thick slices.
6. Brush both sides of the ready-made pizza crust with olive oil.
7. Gently place the ready-made crust, top-side down on grill rack.
8. Grill for 2 to 3 minutes over direct heat until crust is warm. Flip crust.
9. Quickly spread pizza sauce on over topside of pizza crust.
10. Arrange sliced sausage and tomato slices on top of crust. Sprinkle with crumbled with Italian Blend and Feta cheeses, and dried oregano.
11. Grill over direct medium-high heat. Close or cover grill with lid.
12. Grill 5 to 10 minutes or until toppings are warm and cheese has melted.
13. Remove from grill and garnish with fresh basil.

For vacationers, the Daytona Beach Ocean Walk offers much. This area has many things to do and see and is surrounded by other places that are just a short walk away. Let's take a closer look at this very fun and exciting area that is just one single part of the "World's Best Known Beach."
Ocean Walk is a mini mall type area that offers one hundred and ten thousand square feet of restaurants, a movie theater, shops, and the oceanfront boardwalk. Lets take these one step at a time and explore each in detail.
The restaurants offer all types of cuisine from burgers and chicken to seafood. A couple of the main highlighted restaurants are "Bubba Gump's Shrimp" and "Johnny Rockets," which is a nineteen fifties style oriented diner that offers old fashioned cheeseburgers and shakes. Both of these places are relatively inexpensive, however, "Bubba Gump's Shrimp" is probably leaning toward moderately priced. There are also the typical ocean boardwalk fare that is offered too. The Atkins Diet - Pros And Cons

The Atkins diet is a low-carbohydrate diet created by Dr. Robert Atkins resulting from his analysis to reduce his own weight.
The concept of Atkins is in relation to a high protein / low carbohydrate diet in order to lose a significant amount of weight in a short amount of time.

The diet is based on:

*not consuming starchy foods such as bread, pasta, potatoes, cereal, any foods containing sugar, high sugar fruits and vegetables, and even fruit juices.
*dieter is allowed no more than 30g carbohydrates a day; the equivalent of a few pieces of lettuce or less than one apple.
*Atkins dieter is restricted to eat only meat and dairy products, including chicken, fish, and milk, and even bacon, eggs, cheese, and butter.

1. Saute garlic and/or onion in olive oil.

3. Add remaining ingredients and continue mixing on low for desired consistency.

You can also make more than enough and freeze the rest for future meals. With a little bit of tweaking, this sauce recipe can also be used to compliment stuffed shells, cabbage or lasagna.

After the crust is rolled out, add the sauce mixture with a ladle. Spread the sauce in a circular motion until the entire pizza crust is covered. Add a layer of fresh mozzarella cheese. The authentic Italian restaurant will use sliced mozzarella, but shredded will also do.

Place the pizza in a preheated oven set at about 350 for about 12-14 minutes. When the cheese is bubbling and the crust is turning to a golden brown, the pizza is ready. Slice into eight pieces and enjoy.

Big Mama's Breakfast Skillet Delights

Big Mama loved making breakfast. As a youngster, we always had a big breakfast on weekends since we had more time to eat and hold family talks at the table. It was also a good time for Big Mama to try her new creations. These two recipes were among her favorites to prepare. Whenever she made them, we always knew we were in for a real treat. Her skillet delight recipe always turned out just right.

Big Mama's Southern Skillet Delight

Breakfast Pizza

2 tablespoons vegetable or olive oil

6 medium potatoes, sliced

½ yellow onion, diced

½ green bell pepper

Season salt to taste

¼ teaspoon black pepper

1/8 teaspoon celery seed

Dash of crushed red pepper or cayenne, optional

1 pound breakfast sausage, cooked and drained

½ cup mushrooms, sliced

1/8 cup water

1 cup shredded cheddar cheese

6 to 8 eggs

2 tablespoons margarine

Heat oil in large skillet; add potatoes, onions, peppers, salt, pepper, celery seed, and red pepper. Saute' over low heat for 5 minutes-keep ingredients from sticking. Increase heat to medium, add meat, stirring occasionally for 5 minutes. Add mushrooms, water, then cover and simmer until potatoes are tender and has absorbed most of the liquid.

Cover potatoes with cheese until melted. In a separate skillet, scramble eggs with about a tablespoon margarine and serve on the side. Makes 4 to 6 servings.

TIP: You can also substitute diced ham or sliced smoked sausage for the breakfast sausage.

The recipe below is similar to the first one except the eggs and sausage are cooked together.

Big Mama's Egg and Biscuit Scramble

1 ½ pound breakfast sausage

1 ¼ cups chopped onions

1 ¼ cups green peppers

10 large eggs

1 ½ cups shredded cheese

6 large buttermilk biscuits (baked and split)

In a large skillet over medium heat, brown sausage, onions and peppers, drain. Mix eggs in medium bowl. Add eggs to sausage mixture and scramble over medium heat.

Line a sheet pan with biscuits split with cut side facing up. Top with 3 to 4 ounces of scrambled egg mixture. Sprinkle cheese on top. Place in oven at 375 degrees until cheese is melted. Serve with breakfast potatoes and strawberry preserves. M'mm good.

How to Make Cheap Pizza - A Guide for Bachelors, Dads and Students

If you would like to make something other than the standard cup of noodles, try cheap pizza.

It's easy, requires few ingredients you don't already have around, and can be fun for the kids.

Breakfast Pizza

I make my own cheap pizza using a slice of bread for the crust. After all, you probably already have part of a loaf of bread in the house.

For the toppings, you need tomato sauce or catchup if you don't have the sauce, some cheese, and some hamburger, chicken breast or sausage. If you have some pepperoni or olives you can slice up or spinach you can shred, then you have the makings of a gourmet cheap pizza.

Here's the steps to make the pizza:

1. Cook the meat first.  If hamburger, then crumble it up and cook it in a skillet, stirring it around to avoid large clumps. Be sure to drain the grease.

For sausage, just cook it according to the directions, then cut it into small chunks, about 1/2" or smaller.  

For chicken, you can broil it, bake it, or microwave it. Just make sure it's completely cooked, then slice it into small 1/2" size pieces.

I've also made cheap pizza using boiled or cocktail shrimp.  Try it, it's good.

2. Slice the olives into thin slices. Shred the spinach. Do the same with what ever other ingredients you may have.  Just use enough for however many pieces you plan to make.

3. Lightly toast the bread, just until it gets firm enough that the toppings won't soak in right away. If you have feta cheese you can put a layer on the bread and let it melt slightly. Skip the next step if using feta cheese.

4. Put a single slice of cheese on the toast. It's best if it is not frozen, but is already close to room temperature.

5. A can of cooked tomato sauce can be used, by putting a tablespoon full or two on top of the cheese and smearing it around. No sauce? Then use a small amount of catchup instead.

6. Add your toppings, but don't put them on too thick.

7. Put the whole thing into a toaster oven and cook for a minute or two until the cheese has melted, and the crust is starting to turn brown.

8. Serve, and put on a movie for the kids to watch while eating.  Something funny is best.

Be sure to experiment. Sometimes I use multi-grain bread, sometimes I add some spices to the mix. In any case, it's easy to make different kinds for all tastes which is great if you are feeding a herd of kids.

You will need:

For the Marinated Lamb -
12 oz lamb, cut into strips 1 garlic clove, crushed 3 teaspoons oregano 2 teaspoons soy sauce 1 teaspoon salt 3 tablespoons olive oil 3 tablespoons lemon juice
For the Pizza Crust -
2 tablespoons instant yeast 1 1/2 cups warm water 4 cups cake flour Pinch each of oregano, basil, thyme, onions salt, chervil, garlic powder, and salt Pinch of freshly ground black pepper
For the Toppings -
1 onion, sliced thinly 3 oz mushrooms, sliced 6 oz sun dried tomatoes, chopped 4 oz Greek olives, pitted 13 oz feta cheese, crumbled 13 oz mozzarella, grated Olive oil, for frying How to make it:

Put the lamb in a glass bowl. Combine the marinade ingredients and pour them over the meat. Mix well, cover, and marinate for 2 hours in the refrigerator. Pour the warm water into a bowl, sprinkle the yeast on top, and leave it for 5 minutes. Add half the flour and all the seasonings. Stir until you have a smooth batter. Add another cup of the flour and stir until you have a dough ball.

Keep adding more flour, until you have a non-sticky dough. Knead it for 5 minutes, then cover it and leave it somewhere warm to rise. Punch it down, divide it in half, and roll each half into a 12 inch round. Leave it for 15 minutes to rise again.

Drain the lamb and fry it over high heat in the olive oil, until it is cooked. Take it out of the pan and let it cool.

Preheat the oven to 425 degrees F and grease 2 pizza pans or baking sheets. Put the dough circles on the pizza pans, pressing it until it covers the pans or baking sheets.

Arrange the lamb on top of the pizza crust, then the mushrooms, onions, tomatoes, olives and cheese. Bake for about 17 minutes, or until the cheese is melted and the dough is cooked and golden brown.

You won't find this recipe on the TV series "The Sopranos" mainly because the show is over; it certainly would have been nice to hear Tony Soprano order a "Fuggetaboutit Flat Bread." There's still hope though, the Showtime series "Brotherhood" is still going strong and being filmed in Providence, Rhode Island; maybe they'll add this title to a menu or better yet an appearance on our TV show. Well, fame or no fame, this recipe's unique taste and ease of preparation will have you saying "Fuggetaboutit" in no time!

Difficulty (Scale from 1-10):

Breakfast Pizza

Ingredients: (10 inch round) flat breadsPreparationLay each flat bread down and spread a tablespoon of olive oil over the surface of each, then sprinkle garlic powder (to taste).

Serves: 8

Prep Time: 10 minutes

Cook Time: 0 minutes

Total Time: 10 minutes

5 tablespoons of olive oil

2 pounds of fresh mozzarella

4 medium sized ripe/fresh tomatoes

garlic powder - to taste

salt - to taste

freshly cracked black pepper - to taste

3/4 cup fresh basil - roughly chopped

Slice fresh mozzarella thin, or into thin strips (depending on your preference); and evenly place on the tops of the flat breads. Lightly add salt and freshly cracked black pepper (to taste), then top with sliced tomato and use salt sparingly (to taste).

Sprinkle chopped basil over the top of each flat-bread. Next drizzle some olive oil over the tops of the layered flat breads.

Slice the layered pizza into 8 pieces, a pizza wheel or kitchen shears may work best.

Serve as an appetizer or a tasty snack!
