When you think of pizza, you probably think of words like delicious, tasty, filling ... and unhealthy!

Best Breakfast Recipes

Swedish Coffee Cake

This Swedish coffee cake recipe has been passed down in my family for generations. My mother made it for us on our birthdays, and any special event. The crust is flaky and melts in your mouth. The pastry topping is much like a cream puff, and the almond flavor is subtle, yet distinct. You will love it!

Mix together & pat into two thin, oblong loaves on cookie sheet:

1 cup flour
1/2 cup butter
1 T. water

Melt together in pan:

1 cup water
1/2 cup butter
Remove from heat & add to pan:
1 cup flour

Then, add 3 eggs -- one at a time. Mix thoroughly before adding each egg.
Add almond flavoring (a capful)
Place this mixture on top of the oblong loaves.
It will be much like a cream puff pastry.

Bake for 1 hour in a 325 degree oven.
Cool and frost.
Frosting:
Powdered sugar, melted butter, milk and almond flavoring.

Sour Cream Coffee Cake

This coffee cake is moist and delicious! The cinnamon creates a comforting smell in the house while it's cooking. It's a little involved, but well worth the effort. Great for a brunch.

1 cup butter (softened)
2 3/4 cups sugar, divided
4 eggs
2 tsp. vanilla
3 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 cups sour cream
2 T. ground cinnamon
1/2 cup walnuts or pecans, chopped

1. Mix butter & 2 cups sugar.
2. Add eggs one at a time; beating well after each addition.
3. Add remaining ingredients alternating with sour cream.
4. Spoon one-third of batter into greased bundt pan.
5. Combine 3/4 cup sugar, cinnamon & nuts. Sprinkle 1/3 over batter.
6. Repeat layers twice; batter & topping mix.
7. Bake in 350 degree oven for 65 - 70 minutes or until toothpick comes out clean.
8. Cool 10 minutes before removing from pan to wire rack or plate.

Easy Sweet Crescent Rolls

These rolls are so easy to make in the morning -- you can even fit them in before the kids head off to school. And they are simply delicious!

2 pkgs. refrigerator crescent rolls (buy generic, so it's less expensive).
Butter
Brown sugar

1. Take crescent rolls out of package, but do not unroll.
2. Holding roll like a log, cut each log into 6 equal pieces - 2 pkgs. will yield 12 rolls.
3. In a regular sized muffin tin, put a dollop (about 1 T.) of butter and a healthy pinch of brown sugar in each muffin cup -- adjust more or less to your sweetness factor.
4. Place a cut crescent roll on top of butter and brown sugar.
5. Bake at 350 degrees for 10 - 15 minutes or until lightly browned. Gauge your oven the first time you cook these to know how long they take.
6. Turn onto cutting board, and serve.

Easy, Overnight, Breakfast Recipes

We don't leave the house on Christmas and the grandparents frequently come over to watch the boys open their presents. I don't want to have to spend lots of time in the kitchen on Christmas morning, so I've been able to pull together some recipes which are prepped the night before and only require a few minutes the next morning. Obviously, these aren't just for Christmas morning, but any morning that you'd like to have a nice, easy breakfast with minimum kitchen time!

Overnight Coffee Cake

1/3 cup softened butter

½ cup sugar

¼ cup brown sugar

1 beaten egg

1 cup flour

½ tsp. baking powder

¼ tsp baking soda

½ tsp cinnamon

½ cup buttermilk

Topping:

¼ cup brown sugar

¼ cup pecans (or use oatmeal)

¼ tsp cinnamon

1/8 tsp nutmeg

Cream the butter and sugars together. Add the egg; mix well. Mix remaining dry ingredients and add to the creamed mixture alternately with the buttermilk. Beat well. Spread into a greased 8" pan.

Mix the topping ingredients together and sprinkle over the batter.

Cover and refrigerate overnight. The next morning, remove it from the refrigerator for about 15 minutes and in the meantime, preheat the oven to 350f. Bake for 40 to 45 minutes or until a toothpick comes out clean.

Overnight Cinnamon Raisin French Toast

2 TBS butter

5 Golden Delicious Apples, sliced

¼ cup brown sugar

3 TBS apple juice (water is okay, too)

1 loaf of cinnamon/raisin bread

3 cups milk

½ tsp salt

½ tsp cinnamon

10 large eggs

1 TBS additional butter

2 TBS sugar

Melt 2 TBS of butter in skillet and cook apples about 20 minutes until golden. Add apple juice (water) last minute.
Grease 3-4 qt or 13"X9" baking pan. Arrange ½ of the bread slices in pan, overlapping slightly. Mix the milk, salt, cinnamon and eggs really well. Pour half of egg mixture over bread. Reserve ¼ of the apple slices, and then spread the remaining apple mix over the bread in an even layer. Arrange remaining bread in another layer, and then pour the remaining egg mixture over that. Press the bread gently, if needed, to help it absorb the egg mixture. Dot the top with the 1 TBS of butter and sprinkle on sugar. Cover and chill overnight.

Bake the next day at 325f, uncovered for 50 to 55 minutes or until knife comes out clean. Reheat reserved apple mixture and spoon over the top of the French toast as it's served.

Dutch Oven Mountain Man Hash

Here is the perfect Dutch oven breakfast for a cold camping morning. Mountain Man Hash is easy to make, will fill everyone up, is very tasty. It is best made in a Dutch oven, which makes it perfect for cold mornings, since you will have a fire going anyway. You'll cook this with coals underneath the Dutch oven and on top of the lid.

Dutch Oven Mountain Man Hash takes 4 basic ingredients: meat, potatoes, eggs, and cheese. You add each of these to the Dutch oven in that order, starting with the meat. For the meat, you can use one pound of bacon, sausage, ham, or any combination. If using bacon or sausage, cut into 1" pieces and if using ham, cut into ½" cubes. Cook the bacon or sausage in the Dutch oven on the coals until done. If you are using ham, warm up in the Dutch oven (it shouldn't take long). When done, remove some of the grease, but you'll want to leave some in to keep things from sticking, and to add some flavor.

When the meat is done, add the potatoes. This is easily done with frozen potatoes. These come in a variety of types from the frozen food section. Southern style potatoes (which are small cube potatoes) work very well, but any of the frozen potatoes that are used for breakfast will work fine. Use two pounds of potatoes. Just add them to the Dutch oven and let them cook, stirring occasionally.

While the potatoes are cooking, break all the eggs into a bowl, and whip. When the potatoes are cooked, add the eggs to the top. You won't need to stir after you add the eggs-they will cook fairly quickly.

When the eggs are done, sprinkle the top of the eggs with 2 cups of shredded cheddar cheese. Put the Dutch oven lid back on and let the cheese melt. That's all there is to it!

Dutch Oven Mountain Man Hash makes the perfect filling for breakfast burritos. Warm flour tortillas in foil on the side of the fire while the breakfast is cooking. Add heaping spoonfuls of Mountain Man Hash to the center of the tortillas and roll up. Serve with salsa.

Pizza Recipe - Chicago Deep Dish

Chicago seems to be in the news quite a bit these days. Folks may not realize that Chicago has always been a great food town. I prefer deep-dish pizza. You can pack quite a meal in one pizza pie. With the tight economy, this meal will not break your budget and will allow you to possibly have leftovers.

Chicago-Style pizza is a deep-dish pizza style developed in Chicago. The term also sometimes refers to "stuffed" pizza, another Chicago style. True Chicago-style pizza features a buttery crust with generous amounts of cheese and chunky tomato sauce. If and when you are in Chicago, be sure to visit these deep-dish establishments:

Chicago Deep Dish

1 package rapid-rise active yeast (1/4 ounce)

1 cup warm water, between 105 to 115 degrees F

1 teaspoon granulated sugar

2 1/2 cups flour

1/2 cup yellow cornmeal

1/4 cup olive oil

1 pound shredded mozzarella cheese

1 pound cooked Italian sausage, crumbled

1 (28 ounce) can diced tomatoes, well drained

1 teaspoon dried sweet basil

1 teaspoon dried oregano

1/2 cup grated Parmesan cheese

1. In the mixing bowl add the warm water, yeast and sugar, stir with a whisk. Add 2 cups of the flour, salt, cornmeal and olive oil. Use the paddle and mix on speed 2 for 2 minutes. Put on the dough hook and add the remaining flour. Knead on speed 2 until the dough clings to the hook, then knead on speed 2 for 5 minutes longer. Place the dough in a greased bowl and cover. Let rise for 1 hour.

2. With oiled fingers press the dough into a deep-dish pizza pan. Cover the dough with the mozzarella, then top with the sausage. Place the tomatoes over the sausage. Top with the basil, oregano and Parmesan cheese. Bake in a 500 degrees F oven for 15 minutes.

3. Reduce the heat to 350 degrees F and bake for 20 minutes, or until the crust is brown.

Easy, Frugal Breakfasts!

We all know breakfast is the most important meal of the day. And that children that eat breakfast do better in school than those who don't.

However, we also all know that it isn't always easy to find time to prepare that all-important meal or to convince our children to eat it!

Oatmeal Cookies For Breakfast?

As adults with busy schedules, we often find ourselves in a hurry early in the morning. Sometimes, this means drinking a cup of coffee on the way to work. It could even mean a morning donut or other pastry from the drive-through bakery. Why not have a more nutritious quick breakfast?

While flour, at least the whole grain, unbleached kind of wheat flour, is good for you, the rest of the ingredients in your morning donuts and pastries are questionable. Grocery store breakfast bars, and even most dry cereals (for those who have time), have ingredients you do not want to put into your body. A good rule to follow is: If you cannot pronounce it, you probably should not eat it.

The following recipe has wholesome ingredients, less sugar than most, and heart healthy oatmeal. Old fashioned oats are a low glycemic food that enters the bloodstream more slowly than instant oats. Cinnamon is known to help control blood sugar. Local honey is helpful with allergies. The egg and milk provide some needed protein. Nothing in the ingredients is unpronounceable or unidentifiable-and most of us have these ingredients in our kitchens. We can even cut down on the amount of aluminum we ingest by purchasing baking powder without aluminum.


Oatmeal Breakfast Cookies or Bars

2 cups old fashioned oatmeal
1 3/4 cups flour (preferrably whole wheat flour)
1/2 cup brown sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1 egg
1/2 cup honey
1/2 cup oil
1/2 cup milk

Mix all dry ingredients together. In a separate bowl, mix egg, honey, oil, and milk. Mix all ingredients together. For cookies, place by tablespoonfuls on greased cookie sheet and bake for 10 minutes at 375 degrees F. For bars, spread dough in greased 9" X 13" baking dish. Bake at 375 degree F oven for 20 minutes or until done in center.

Makes 24 big cookies or 24 large bars.

While most cookies would not be appropriate for breakfast, these wholesome cookies would be an excellent substitute for donuts or pastries. They don't take long to make, and keep well for several days in a sealed container. Two to four cookies in the morning are a hit with both adults and children, and provide a solid foundation for a busy day.

All over the web, people are searching for free Pizza Hut coupons. Little do they know that they are right there under their noses. All you have to do is look in the Sunday edition of the local newspaper. To attract as many customers as possible, you really have to work the publicity angle. It's not enough to put up some roadside signs and to mention the event in your group's newsletter.

Include a full description of each item in large type and be sure to have enough lines on your bid forms for at least twenty bids.

Verbally encourage each customer to bid on something and make sure that each item has at least a starting bid on it before the crowd forms and things get hectic.

Conduct a raffle
Pancake breakfasts are a great place to sell raffle tickets. If you offer it right next to your payment table, close to half of your customers will buy a raffle ticket that's reasonably priced and has a large prize.

If you can't get a good enough prize donated, then run a 50/50 raffle. That's where the holder of the winning ticket gets half of the ticket revenue and the other half goes to the fundraiser.

Ask for donations
Place a large open-mouthed jug or bucket next to the cash register and prominently label it as the place for donations. Even if people only donate change from paying for their pancakes, you'll raise a considerable amount.

Attaching a note saying 'Every Little Bit Helps' and 'Make Checks Payable To' is another great way to stimulate donations. With some groups, donations exceed ticket revenue!

Sell advertising
If you are using paper placemats for your pancake breakfast, you can sell advertising space on them to local businesses. This works especially well when your event is an annual affair and draws a substantial crowd.

Some groups put a couple dozen ad blocks on their placemats and charge $100 a spot. They not only get it, they sell out their ad space weeks ahead of the event.

Summary
There are many additional ways at this type of event to raise more funds than just selling pancakes. Look to add as many fundraising activities as you can such as silent auctions, raffles, and asking for donations.

Work the publicity angle with a newsworthy press release focused on exactly why your group is raising funds and how it will benefit the recipient. A good human interest story is always newsworthy.

Preparing Breakfast For Your Kids

It's a true fact that if you send your kids out to school in the morning with a nutritional breakfast inside of them, they will have the energy that they need to get through the day as well as giving their brain the goodness that it needs to help with the process of learning.

If for any reason your kids do go to school without any breakfast, it is almost certain that they will spend the morning feeling tired and hungry, it is almost impossible to learn anything correctly when you are feeling tired all the time.

Quick Microwave Breakfast Ideas

I've come to love my microwave in more ways than ever. We have three boys who are growing so quickly and always on the go with sports, school and playing in general. They are always hungry and I have definitely found that starting them off with protein rich and fiber rich breakfasts keep them going longer than boxed cereals. In addition, I do dental hygiene on a per diem basis. I might be trying to get out the door in a very short amount of time and I want to be able to eat a quick breakfast that will also fill me up.

I've come up with a variety of breakfast recipes that utilize the microwave which significantly speeds up the cooking process without sacrificing flavor. These quick, microwave breakfasts will also save you money if you don't have to swing by the local fast-food window on the way to work!

Bacon, Egg and Cheese Sandwich

First, put toast or English muffin into toaster and get that toasting. Second, get egg, slice of cheese and two slices of pre-cooked bacon out of fridge (you can also substitute those precooked sandwich style sausage patties). Grab cooking spray and large coffee mug and small bowl to beat egg. Put the bacon into microwave while you prep the egg (probably takes 30 seconds or so). Break egg into bowl and beat with a bit of water. Generously spray inside of mug with cooking spray and pour beaten egg/water into it. Bacon should be just about done. Pull the bacon out, put the mug of egg in and cook on high for one minute (might take another 10-30 seconds depending on your microwave). While the egg cooks, take out the toast/English muffin and place cooked bacon on it, and then the slice of cheese. When the egg is done, use a fork to slide it out of the mug and out onto the cheese. You can fan the egg out by slicing it through the middle. Top with the other slice of toast or English muffin and voila, bacon/egg/cheese sandwich in less than five minutes!

You can also prepare several of these at one time, wrap each in plastic wrap and then refrigerate. In the morning, you can grab one out of the fridge, remove the wrap and microwave on a plate for about 30-60 seconds for an even quicker breakfast!

Omelets

You'll be using the same cooking technique for cooking the egg but this allows you to add fillings and still make it quick! I use a glass bread pan to make my omelets. First, get 2 eggs and various fillings out for your omelet. Some ideas for your omelet:
-diced vegetables like broccoli, onions, peppers, spinach (great way to use up small amounts of leftovers)
-diced cooked meats like ham and turkey
-diced up cheese
-fresh or dried herbs
SAVE TIME EACH MORNING-Have a small supply of pre-cut cheese, vegetables and meats in containers for easy morning prep.

Generously spray your bread pan with non-stick cooking spray. Beat the two eggs with a tablespoon or so of water. Pour the beaten eggs into the sprayed bread pan. Place your fillings throughout the egg mixture. Microwave on high for about two minutes, keeping in mind each microwave varies on cook times. It will puff up a bit. CAREFULLY REMOVE FROM MICROWAVE-using oven mitts as the bottom of the pan will be hot! Fold out the omelet onto a plate and enjoy!

You can experiment with making a larger omelet in a 9" square baking dish using 4 eggs and more fillings. You'll need to microwave a bit longer as well. When you use the bread pan, you can easily fold the omelet out onto slices of toast for an omelet sandwich!

Oatmeal

I love oatmeal. I love quick oatmeal but not those pricey, little instant bags of oatmeal. I love old fashioned type oatmeal that is QUICK! It can be quick if you use the microwave!

I use a rough ratio of 1:2.5 to make my oatmeal. ¼ cup of old fashioned rolled oats to 2/3 cup of water. Vary the liquid to your preference to how you like your oatmeal. I will also add a bit more water when I add dried fruit to my oatmeal. My basic recipe is:
-1/4 cup of old fashioned rolled oats
-2/3 cup water
-few dashes of cinnamon
-tablespoon or so of brown sugar
-some cut up dried apples (I cut them up ahead of time so I can grab them quickly)
-just a pinch of salt

Give it a gentle stir and then microwave on high for two minutes. Stir it again, judge if it's the right consistency and add more liquid if desired (a bit of milk is tasty, too). It's hot so dig in carefully. Mmmmm, cold milk and hot oatmeal on a cold New England morning is so nice!

You can speed up the oatmeal preparation by mixing up the roll oats, the cut up dried fruit and the cinnamon together in a container. You'll just have to reach in and scoop out the desired amount of the mix. I don't add the sugar and salt because they tend to not cling too much and end up in the bottom of the container.

A Weekly Nutrisystem Menu Sample - 7 Examples of Breakfast, Lunch, and Dinner Meals

I get a lot of emails from people who are asking for me to paint them a picture of what life on nutrisystem is like. I've written about a typical day on this diet. I've had a few people tell me that this isn't a big enough glimpse of the meals to give them a full idea of what they will be eating. So, in the following article, I'm going to expand on this idea and provide an example of a week's worth of breakfasts, lunches, dinners, snacks and desserts. I will also give you examples of the sides that you are asked to add onto each meal.

An Example Of A Week's Worth Of Nutrisystem Breakfasts: I often say that I think that the breakfasts, snacks, and desserts are my favorite part of this diets. Even though this is a lower carb diet, you are still allowed cereals, muffins, pancakes, and scones. For this example, I've tried to mix things up a bit so that there's a lot of variety. Here are seven typical breakfasts that I chose and the sides which would work well with them. They are: the banana nut muffin with milk; the egg frittata with cantaloupe; the blueberry pancakes with yogurt; the apple cinnamon oatmeal with apple slices; the apple strudel scone with cottage cheese; the cluster crunch cereal with skim milk; and the cinnamon roll with yogurt.

Now, this is only seven choices. There are more. But this does give you a good sampling of the types of products that you will eat. There are different flavors within each category. There are different flavors of oatmeal, cereals, scones, and muffins. What I've given are examples that I enjoy.

7 Days Worth Of Nutrisystem Lunches: People often expect to see a lot of soups here. And, there are some. But there are also pastas, hot dogs, bars, salads, and rice dishes. The examples that I've chosen are: the cheese tortellini and a small salad; the hot dog and celery sticks; the chicken and pasta in cacciatore sauce with carrot sticks; the chicken caesar salad with blueberries; the red beans and rice with red peppers; the minestrone soup with salad; the fettucine alfredo and cucumber slices; and finally, the chicken and noodles with watermelon.

A Weekly Sample Menu Of Nutrisystem Dinners: The dinners are a bit more substantial and they do offer a lot of variety. I tend to like the comfort food options, so if I were choosing for an entire week, I might chose: the Cajun chicken and sausage with fat and sugar free pudding; the lasagne and meat sauce with a salad; the pizza and strawberries; the beef steak with potatoes and cantaloupe; the bar b que pork wrap with celery sticks and fat free dressing; the macaroni cheese and beef with sliced tomatoes; and the mushroom risotto with sliced red peppers.

7 Tasty Snacks: You really can't go wrong with any of the snacks. But, here are seven of my favorites: the nachos; the pretzels; the herb snack mix; the cheese puffs; the bar b que chips; the coconut almond bar; and the chocolate rainbow desserts.

A Week's Worth Of Desserts: This isn't going to be very original, but the desserts are my favorite. I honestly can't think of one that I wouldn't eat, and I pretty much like them all. If I could only chose 7, I'd pick: the almond biscotti; the chocolate cake; the peppermint cookie patty; the nutrichocolates; the golden pound cake: the blueberry lemon dessert bar; and the mint chocolate crunch bar.

All of the meals are meant to be interchangeable. And, nutrisystem does allow for you to buy foods individually, by the week, and by the month. The monthly packages usually work out to be cheaper because you're buying in bulk and because they allow for you to use the most generous coupons with the monthly packages.

Whole Wheat Pizza Crust

This recipe is a bit complicated, but it's a great one to have in your repertoire. The key is just to follow all the steps exactly, and your pizza will turn out perfectly. Pizza crust is a very versatile food, and can be used as the foundation for many toppings, or even as a bread for soups and stews. It's also a wonderful thing to have in your freezer for busy weekday dinners, or lazy Saturday lunches. Just wrap the crusts tightly in plastic wrap and foil before putting in the freezer.

1 tablespoon sugar
1 cup warm water, 110º to 115º F.
1 envelope active dry yeast
1 1/4 cups all purpose flour
2 cups whole wheat flour
1 teaspoon salt
1/4 cup extra virgin olive oil

Dissolve the sugar in the warm water. Be careful that the water is the correct temperature (use an instant read thermometer) as it will affect the yeast otherwise. Add the yeast to the water and stir until it is dissolved, about 1 minute. The mixture should be a beige color. Let stand for five minutes, allowing a foam to cover the surface. This tells you that the yeast is active. If no foam forms, get a new packet of yeast, and start over.

Combine one cup of the all purpose flour and all the whole wheat flour in the bowl of a stand mixer. Add the yeast mixture, salt, and olive oil. Using the flat beater, mix for 1 minute at medium speed. Now using the dough hook, beat for 5 minutes at medium speed. If the dough feels sticky, add more flour. If it is dry, add warm water, one tablespoon at a time. Remove from the bowl, and shape into a ball. Place in a large, well-oiled bowl. Coat the ball with oil, then cover the bowl tightly with plastic wrap. Allow to rise until it has doubled in size. Then punch down the dough, compressing all the air bubbles. Form into a ball, turn to coat and cover tightly again. This process can be repeated up to four times before the dough is spent. It can also be refrigerated overnight if necessary. Make sure the dough is at room temperature before moving on.

For this particular dish, I like to cut the dough in fourths and stretch the dough by hand. But you can use a rolling pin, and the entire ball of dough as well. Gravity is your greatest ally here, so stretch the dough by allowing it to hang in the air, as you gently manipulate it onto a circular shape. Heat the oven to 450º. Once the dough is stretched to the proper size, place it on a pizza stone or baking sheet. For a traditional pizza, add your toppings now. Bake for 15 minutes, or until cooked through and gently browned. Serve immediately, or cool before freezing.

Ode to Famous Pronto Pizza

Last week we didn't feel like cooking. Some days, just like everyone else in America, I feel like going out for a slice of pizza. We have been on a quest for a good slice since we moved to Florida. We heard that there was another Famous Pronto Pizza opening soon in the Heathbrook Shopping Center (off route 200, Ocala, FL for the Florida locals), so we decided to check it out.

To our delight, it was having its grand opening that very day! When we arrived we were greeted by the staff, who were more than accommodating. They excited our senses as they described all the wonderful offerings they could make us. The smells were intoxicating. There was an eggplant pizza in the oven about to come out. So I decided to go for that. My companion, an Italian native went for a spinach and tomato slice that looked beautiful and fresh. He was also convinced by George, the manager, to get a bowl of classic spaghetti with meatballs.

So what makes a good authentic Italian pizza and why is it so hard to find? There are many components to making a pizza great. Some places have part of the equation but lack the others. All the components have to be there to make a pizza unforgettable. The first component has got to be that it is cooked in a wood burning pizza oven. Check one for Pronto Pizza. Second is it must posses a full bodied tomato sauce with herbs and garlic as a backdrop. Check two for Pronto Pizza. Third, toppings should not be overdone. There should be a perfect blend of ingredients with each bite. Check three for Pronto Pizza. Then fourth, there is the cheese component. It must be soft and gooey, but taste like cheese, not just gooey plastic. Check four for Pronto Pizza - the cheese on their pizza has a nice tang and a salty bite at the end. Pizza tastes like pizza here. These are the things we love about Pronto Pizza and will have us returning time and again.

The spaghetti and meatballs had a wonderful sauce full of onion and oregano flavor. The pasta was cooked al dente, and the meatballs were so big they had to be cut in half for serving. All of this was topped with fresh parsley and melting cheese. It was so big, we had to bring some home and it lasted 2 more meals! For $6.95, that is hard to beat!

Biscuit Meals Made Easy

Scrambled Egg Biscuits

1 pk biscuits (I use premade biscuits found in the dairy case)
6 eggs
1/3 cup Half/half, (can use coffee cream, milk whatever you have on hand)
Meat (chopped up) optional such as Precooked sausage link, pre cooked bacon, pepperoni
1 ½ cups Cheddar cheese
Salt & Pepper to taste

-Take 1 biscuit and flatten out to cover bottom of muffin pan (it should go up the sides just a little). Do this with the rest of biscuits.

-Take a palm size scoop of cheese and put on biscuit.

Chili Biscuits

1 pk Biscuits
1 Can Chili
2 cups Cheddar cheese

-This is optional but I put a little cheese in each muffin pan first.
-Take 1 biscuit and flatten out to cover bottom of muffin pan (it should go up the sides just a little). Do this with the rest of biscuits.
-Then put ¼ c of chili on each biscuit.
-Top with scoop of cheddar cheese.

Bake in preheated 400 oven for 20-25 minutes or until brown. Scoop out with spoon.

Pizza Biscuits

1 pk busicuits
Pizza sauce
2 cups mozzarella cheese
Pepperoni or Sausage Optional

-Take 1 biscuit and flatten out to cover bottom of muffin pan (it should go up the sides just a little). Do this with the rest of biscuits.
-Put scoop of pizza sauce on each biscuit.
-Top biscuit & sauce with Meat (if using)
-Top with scoop of cheese

Bake at 400 degree oven for 20-25 minutes or until cheese browns.

Have you ever tasted giardiniera? This specialty Italian style condiment, pronounced "Jar-din-air-ah", adds a jolt of flavor to pasta, pizza, sandwiches, and more. Let's take a look at the five different styles of giardiniera...

What Is Giardiniera?

If you have to ask, we can tell you're not from Chicago... just kidding!

Let's get right down to it. Giardiniera is a condiment that is made to enhance the flavor of your favorite foods. There are a number of recipes, but the main ingredients are the same for the most part.

The word "giardiniera" means "from the garden" in Italian. It's the perfect name, because all the ingredients do in fact come from the garden. In a typical jar, you'll find peppers (hot or mild), celery, green olives, carrots, and other vegetables chopped and packed with special spices in shelf stable oil.

The uses for giardiniera are varied. It's perfect as an addition to pasta, on top of a slice of pizza, or with Italian beef or meatball sandwiches. Sub sandwiches aren't complete without a fork full of giardiniera. You can even use it with scrambled eggs for breakfast!

There are several varieties of this versatile condiment. Let's break it down for you...

Regular Style

Most giardiniera is coarse cut. That means the vegetables are chopped in chunks. If you look at a jar of regular style, you will be able to recognize each of the vegetables. This style is most common. It is best used when baking it right into (or on top of) a dish, like lasagna or pizza.

Relish Style

The label says "relish style" but it also goes by finely chopped or minced. This style was invented by E. Formella and Sons in the early 1990's as an alternative condiment that would be neater to eat.

In essence, all the vegetables are finely chopped so the end product looks like a relish... the kind you put on a hot dog. It is neater to eat than the regular style because you don't have to worry about olives, celery, or other vegetables rolling off your sandwich or slice of pizza. Relish style is best when added to your meal after it is completely prepared.

Hot Giardiniera

Now, on to the heat levels. The first is called hot, and it is the most popular. The heat comes entirely from the peppers, and not artificial red pepper flakes that are used by some manufacturers.

The result is a low, smoldering heat that complements your food rather than overwhelming it. In general, a few spoon or fork fulls is adequate to add a spicy kick to your meal. It is ideal for pizza or any kind of sandwich to add the true taste of Italy (or Chicago!).

Mild

Same great taste with no heat. It really is that simple! All the ingredients are the same, except for the peppers. A mild style is used instead of a hot variety. We like the mild style in the morning, with scrambled eggs or folded into an omelet.

Extra Hot

Alternatively you can broil a bell pepper. Rub vegetable oil all over it first, and then put it on a baking sheet. Use tongs to turn it when the top starts to go black. You can either broil a whole bell pepper or slice it into wedges and broil those. Another method is to cook the bell pepper wedges or strips in a skillet in olive oil. When they are tender, they are done.

The easiest way to get the skin off a roasted bell pepper is to put it in a bowl and cover it with plastic wrap. This traps the steam. Leave the bell pepper for twenty minutes then you should find the skin comes off easily. Pull the stem out before you take off the skin. It's in every newspaper at least once a month, telling you that breakfast is the cornerstone of weight-loss, productivity and general all-round awesomeness. Breakfast of an Olympian

You've heard breakfast is the most important meal of the day. It revs up your metabolism, aids your mental focus and provides a nourishing start so you won't binge on cookies when three o'clock rolls around. For people like Michael Phelps, the winner of more gold medals than any Olympian ever, breakfast isn't just important - it's absolutely essential to his success as an elite athlete. You may not need, or even want, to eat as much for breakfast as Michael Phelps does, but you can learn a lot about nutrition from his approach.

Eat Like Phelps

In a single day, Michael Phelps consumes about 12,000 calories. To put that in perspective, the average woman eats about 2,000 and the average man, 2,500. Keep in mind that Phelps also spends around five hours a day working out both in the pool and in the gym. When you're six feet, four inches of lean muscle and train like Phelps does, you need all those calories to fuel your body each day.

Although, Phelps' daily calories are divided among his three main meals, breakfast is especially important. Having the right foundation to power through your day is one key to success whether you're training for the Olympics or juggling a busy job and family life. In order to kick start his metabolism and supply energy for his workouts, Phelps begins his day with two cups of coffee and typical breakfast fare, like pancakes and eggs. Not so different from you and me, right? Wrong.

Phelps' body requires so much energy, that his typical breakfast consists of a five-egg omelet; a bowl of grits; three fried egg sandwiches with fried onions, cheese, lettuce, tomato and mayo; three chocolate chip pancakes; and three pieces of French toast. Although, the average man would have a hard time eating so much food in one sitting, you can learn from the logic behind Phelps' choices. His meal consists of a mix of carbohydrates (from the bread, pancakes and grits) for a quick burst of energy, and protein (from the eggs) for prolonged endurance.

Power Up Your Day

I do not suggest duplicating Phelps' breakfast menu, but there are some healthy solutions you can take from Phelps' example. Consider the following tips when planning your own "power breakfast."

1) No skipping - This is the single most important lesson to learn from Phelps. My patients sometimes say they don't feel hungry in the morning. Even if you don't have much of an appetite before noon, your body still needs fuel. When you wake up, your metabolism is moving at a snail's pace because sleep requires very little energy. In order to start burning calories for energy, you need to feed your metabolism.

2) Eat a combination of nutrients - A balance of carbohydrates and protein gives your body instant energy without the "crash" that results from a high-sugar meal. Try scrambled eggs in a whole-wheat tortilla; oatmeal with a handful of nuts; or ham and melted cheese on an English muffin.

3) Tailor your breakfast to your life - Phelps' breakfast is designed for serious cardiovascular endurance and power. If you have a three-hour strategy meeting that requires laser-like focus, eat a veggie omelet for brain-boosting protein. If you have a morning filled with errands and volunteering at your kids' school, eat cereal with milk and fruit or a banana with toast and peanut butter for instant energy.

4) Be consistent - If you eat a high-powered breakfast everyday rather than just occasionally, you will benefit more. You will have a steady supply of energy so the days of feeling sluggish and tired will be history. You will actually crave nutritious food, instead of forcing it down. You will also put an end to overeating later in the day thanks to your healthy foundation.

5) Include foods you like - Do you think those chocolate chip pancakes Phelps' eats have a solid health benefit besides another serving of carbs? No, but they sure are tasty. It's okay to incorporate foods and ingredients that you love along with your healthy choices.

An Alternative Approach to Breakfast For Teenage Athletes

You might have seen a recent broadcast of NBC News that highlighted a new study on the effects of skipping breakfast. It was done by the American Academy of Pediatrics (March 2008 newsletter, Vol. 121, No. 3), and states that skipping breakfast can be directly linked to excess weight gain in high school aged males and females.

Although at first it may seem strange that skipping a meal would cause weight gain, there are some obvious reasons why this occurs. By waiting until lunchtime to have your first meal of the day, this creates a very long window (roughly 12-15 hours) where no food intake occurs. This has an adverse effect on the metabolism, which slows down in response to what is basically a daily fast. The second reason is that most people make up for being hungry all morning by overeating later on. They are more likely to choose foods that have higher fat and sugar contents, whether they realize they are doing it or not. Combine the two factors, and it's no surprise this eating pattern is leading to kids becoming overweight.

One out of every four teenagers skips breakfast on a regular basis. On top of the weight gain issue, this is an even more serious problem for a group that is still developing physically. Proper vitamin, mineral, and calorie intake is essential for healthy growth during these years. And when you factor in the extra caloric needs of active athletes, skipping any meal makes it incredibly difficult to physically function at an optimal level.

Working in a middle school every day, along with training high-school age athletes, has given me a good first-hand account of this situation. Kids list a variety of reasons why they skip breakfast. Some say they don't feel like eating in the morning, others say it bothers their stomach during school, makes them tired, or that they just don't have enough time. Although few actually say it, social pressure to avoid becoming fat is an underlying issue with many at this age, which is ironic in light of this new study.

For them these are all good reasons, and they don't see how the value of breakfast outweighs all of the downsides.

Re-Thinking Eating Times

Most kids are pretty reasonable when they are presented with a practical solution to their problems. If there was a way to solve the problems listed above, I believe most would see the value in a revised approach to eating around a school schedule.

Maybe it is time to stop pushing the idea of one large breakfast before school, and start pushing the idea of multiple smaller meals between morning and the end of the school day. This revised approach will address the caloric and vitamin needs, as well as to keep the metabolism running efficiently. It will also curb the psychological need to overeat and make poor food choices later in the evening.

A general guide would be to eat a smaller version of breakfast before leaving for school, a mid-morning snack, a regular lunch, and another snack right around the end of the school day.

What this does is space out two meals into four over about a nine hour window. None of the meals are particularly large, and addresses all of the concerns that I have heard most often.

First, it will require only minutes to eat the first meal before leaving the house. That minimizes the time issue. Second, by keeping the meals small it lessens the stress on the stomach. That is crucial when you consider that kids often have to sit in class for almost seven hours per day, where a heavy breakfast can be fairly uncomfortable. Eating smaller meals also helps to avoid the sluggish feeling that often comes with a high caloric intake in a short period. And finally, this schedule will rev up the metabolism every two to three hours, which will help to keep body-fat levels down over the long term.

Implementing the strategy

In order to change the habits of those who now skip breakfast, it will take a joint effort from the kids, parents, and schools. Kids are the ones who have to change their habits, and need to take responsibility for themselves. To help enlighten them a little, they should be made aware of the study we mentioned earlier. When presented with this alternative eating schedule, it will ultimately be up to them to choose whether they will follow it or not.

Parents must make the foods that fit best for each mini-meal readily available at all times, including many items that can be eaten on the go. Without the right food items, this plan will not work. Parents also would benefit from encouraging a healthy eating lifestyle, hopefully even modeling it, and provide any education on the subject that they can. Believe it or not, many teenagers actually listen to logic when they are truly the ones left with the final choice as to whether to use it or not.

And finally, schools systems can have a major effect on the eating patterns of their students. If it is not already allowed, students should be able to eat snacks in class during designated times (mid-morning, late in the day before practices, etc). Even better, some school employees could run a snack store that is only stocked with healthy items, such as fruit, cereal bars, healthy trail mix, water and juices. And despite the intense pressure to meet state testing standards, teachers and administrators should seek to find ways to educate students on healthy eating. Math and science classes would be the most logical areas where you can create standards-based lessons that integrate the concepts of proper vitamin and mineral intake, calorie control, and other basic nutrition concepts.

What foods to focus on at each meal

Although what someone eats mostly revolves around personal preference, there are some common sense basics that apply to many situations. What is suggested below are general guidelines, and not rigid rules that may prevent you from following a healthier eating plan. Remember that eating almost anything in the morning is better than nothing.

Meal #1 - This is the first meal after sleeping, and it should contain a decent amount of protein. Many positive events like muscle repair only occur when the body has protein readily available, and at this time of day it is always deficient. An omelette or tall glass of milk would be great, but even something simple like putting peanut butter on a bagel would do the trick. A bowl of healthy cereal with low-fat milk is also a great choice. Something to drink, like a glass of juice, is also quick, adds more vitamins to the meal, and is easy to add.

Meal #2 - This will usually be eaten during the school day, so it should be a small, on-the-go item or two. This would be a great time to add fruit to your diet. One or two pieces are ideal, depending on your calorie needs. Other items like protein bars, cereal bars, and healthy trail mix fit well, too.

Meal #3 - Lunchtime. Ideally, it would contain something like a sandwich with veggies, lean protein (chicken, turkey, lean roast beef), and whole-grain bread, plus a drink and/or fruit. Many kids are confined to the school lunch choices, which are often high in fat and sodium, and don't fit in with a healthy eating plan. Unless your school has healthy alternatives in their cafeteria, you should bring a lunch from home.

Meal #4 - A small, on-the-go type snack. The timing of this meal should factor in any after-school physical activity. Give yourself about 60-90 minutes before starting practice (or a game) to digest this snack. This will likely prevent any stomach discomfort. Something like a Power Bar would be just enough to keep your appetite under control until dinner. This snack should be high in carbohydrates, especially if you need energy for a sport after school.

Throughout the day you should also be consuming water. Depending on your age, size, and activity level, either one or two 16. oz. bottles should do. Use your own discretion, and make it a habit to have a water bottle with you throughout the school day.

Follow this with a vitamin and mineral-rich dinner later in the evening, and you have an outline for a healthy eating schedule. Late-night snacks will probably not even be a thought after consuming five meals, so you will likely drop a poor habit that would otherwise keep you from being hungry when you wake up.

There will be some financial cost to obtaining the foods necessary in this schedule, but that should be offset by not having to stock up on unhealthy snacks around the house. This will require some preparation and a little planning, but the positives easily outweigh any initial inconveniences.

By following this sensible eating schedule you can expect to see many benefits over time. Energy levels, sport performance, appearance, and your overall health will all improve. Once you get over the initial switch it will become routine, and you'll wonder why you ever skipped breakfast in the first place.

Is Clapham The Most Popular Place For Pizza?

It's a question I've been turning over in my mind for a while now but seeing my local Clapham pizza restaurant packed with satisfied customers night after night I started to wonder if Clapham Common is the most popular place to get pizza in the UK. I think the answer lies in analysing a few facts and statistics about the great Italian dish while sitting down to my favourite slice of double pepperoni.

Pizza is thriving in these tough economic times with the whole industry seeing an upturn in sales. The big numbers are to be found in take-out rather than eating-in but there are a few eateries bucking the trend because of a strong reputation of providing quality food in a customer focused environment. This is certainly evident when you see all the happy clientèle in the Clapham restaurant I frequent.

But is the UK market the strongest? It's certainly displaying some positive numbers but the Americans continue to enjoy top status which is no surprise given their rich history of eating the dish. The US has been hit hard by the economic downturn but restaurants in the States tend to be resilient in tough times due to a society that relies on grabbing take-out for daily eating.

The surprising success stories are coming from the Asian market. Go back ten years and you'd be hard-pressed to find Indians choosing takeaway dishes that originate from Italy. However, a regular slice of pie has become a ritual for millions of Indian families. And of course, pizza is such an adaptable cuisine that the Asian market has customised the dish to suit local tastes. With homegrown brands leading the way against the recognised Western brand names, revenue from sales in Asia is closing in on the US.

So how come the dish seamlessly integrates into the eating habits of such diverse cultures and economies? One reason is the way it can easily change to suit customer trends. As consumers, we are becoming savvy to the ingredients used in our food so many restaurants have switched to healthier options. My own pizza restaurant in Clapham is famed for the healthiest and lightest  dough base in the country. Research suggests that people seek out quality eating at affordable prices and pizza ticks both those boxes. So, restaurants serving the dish continue to succeed while other eateries offering more expensive dining options struggle.

And then we come to take-out. As we all look to tighten our belts in hard times takeaway prospers. A slice and a movie at home is a cheaper alternative to dining out and I know my local Clapham takeaway is always doing great business throughout the week and at weekends which proves the point somewhat.

So, while Clapham Common, or the UK for that matter, can't boast to be generating the most money from pizza sales, it is certainly a popular dish whether eating in at a restaurant or ordering out for a night in front of the telly.

Chicago Vs New York Style Pizza - A Tasty Rivalry

Everyone has their own favorite types of pizza and that includes the crust, sauce, and toppings. A lot of people would choose a New York style as their favorite kind. New York pizza is round and has a thin base, which is both chewy and crisp.

The slices are usually only topped with one, two, or perhaps three toppings, in order for the crust to stay crisp rather than go soggy. New Yorkers tend to fold this delicious snack in half while eating it, to make it easier to handle.

Other names for this tasty treat include "regular slice" or "regular pie." Ordering a "plain slice" means, you only want cheese on top. You can order a slice or a whole eighteen inch diameter pie, which can be cut into eight slices. Slicing it into wedges or slices, rather than squares, is also known as "party cut" or "tavern cut."

This variety originated at the turn of the twentieth century in New York City. Tomato sauce and mozzarella were the other original recipe toppings. The New York style has a hand-tossed crust and the sauce is minimal. It makes a great street snack. High-gluten bread flour is used to make the crust of a New York style pizza and this is what differentiates it from many other varieties.
