Take a third of the vegetable combination out of the skillet and keep it to one side. Beat eight eggs with half a cup of milk, a cup of shredded Swiss cheese and some salt and pepper and pour this combination over the vegetables in the skillet. Bake the frittata until it is golden and puffy. This should take fifteen minutes.

Put a tortilla on a baking pan and invert the Mexican frittata on top. Put another tortilla on top of that and spoon the reserved vegetables and half a cup of shredded Swiss cheese on top. Bake for five minutes more or until the cheese melts. Cut the frittata into four wedges and serve immediately with sour cream and salsa.
