The 80-10-10 Diet - How Much Fat You Should Eat With the Raw Food Diet

In this excerpt, Dr. Doug Graham discusses his 80-10-10 Diet and how many raw fooders eat too much fat. This is an extract from Dr. Doug Graham's interview for the Raw Summit Archives, a unblemished interview encyclopedia of cutting edge living and raw food knowledge.

Kevin Gianni: You talk about the 80-10-10 diet, it's the name of your book. What are some of the main principles? What are the 80 and 10-10?

Doug Graham: We had contests to name this book. We had trial and error. We asked hundreds and hundreds of people. We ended up with a list of about sixty titles and fought bitterly in the middle of a staff of about twelve population over this title and that of what should be the title of this book. And 80-10-10 tells you something, but it does not tell you enough to make you know what it is. I agree. It is not like the Sedona diet or something which brings a photograph to mind. And I in effect do not know if it is good or bad but the 80-10-10 diet is in effect what it is about. 80-10-10 refers to the three-caloral nutrients. There are only three nutrients in human physiology, or human nutrition that supply us with calories. Those are carbohydrates, protein and fat. Well, in the 80-10-10 diet, I recommend that a maximum of 10 percent of fat come from protein and a maximum of 10 percent of fat come from fat. Therefore, a minimum of 80 percent of fat coming from carbohydrates. And that is in the greatest simplicity the 80-10-10 diet. Now, of course, you must eat enough total fat because no diet is going to work if you do not eat enough food and in effect not in the long term. And sometimes population get confused about that. They say "well, geez, if I eat a banana, and a lettuce leaf and an almond then I am doing the 80-10-10". I go, "yes you are, but you can not live on that diet". That would not get you past breakfast.

Kevin: It's just breakfast.

Doug: It's breakfast, exactly. And raw food is to come to know that we get to eat more volume than most other people. But human beings are funny. population are funny. We tend to pat ourselves on the back for things that we are going to do or for changes that we are going to make and then don't often make them. Or we pat ourselves on the back for changes that we think we have made that we in effect haven't. And it is a funny world this way and so, although everybody knows that pizza is not health food, nonetheless, when we go vegetarian we create vegetarian pizza. And when we go vegan we create vegan pizza. When we go raw, for our health, we still create raw pizza. And in truth, if it looks like pizza and it tastes like pizza, it's going to digest like pizza. And it's likely going to have the caloral nutrient ratio of pizza. And it is going to be hard on our bodies. I am not against it. I am neither for or against it, because it is not about right or wrong, it's just the consequences. It is what you want to have happen as a follow of eating the food you eat.

In other words, it came to me apparent at a safe bet point that essentially you are on a road in life. And that road, through my medical training, I am in effect trained as a chiropractor, but through my medical training what I learned is to be able to predict what road population are on. And so, if they are on a suitable diet and they never exercise, or they take birth control pills, and drink a lot of coffee, I think they know there is a very good opening that osteoporosis is going to be in your future. If they are eating a high fat diet there is a very good opening that some form of what is referred to, erroneously, as a sugar metabolic disorder is going to be in your future. Currently, the town for Disease control estimates that roughly half of all Americans are whether diabetic or pre-diabetic and they say it will be over 80 percent of all Americans by the year 2020. All we have to do they say, is keep doing what we are doing. Well, what we are doing is, the mean American, eating roughly 40 percent of his fat from fat when the world authorities are recommending 10 percent as a maximum. And if we keep doing that we will all come to be diabetics. The raw fooders, I thought, we're doing far good until I started retention track, and after interviewing about 5000 raw fooders, I feel pretty comfortable in giving averages, and the mean raw fooder consumes 65 to 70 percent of their fat from fat.

Kevin: Wow

Doug: This is roughly duplicate the American average. We are in effect thumbing our nose at the nutritional advice of all the world's health professionals. While at the same time trying to use some of the data that they say. So, for instance, it is very base to hear a raw food leader say, you know, you don't need this much of this nutrient and that nutrient or the next nutrient because as raw fooders, the nutrients you consume are of a much higher quality. Or, you digest it far better, and you digest it far better, and so you get so much more of it. Well, if that is in fact the case, why are we eating duplicate the fat of everybody else? Shouldn't we be eating half the fat and still getting all the nutritional benefits? We should not have to duplicate our fat consumption. So that was sort of the road, that's what the 80-10-10 diet became about was to help raise an awareness, strictly in the middle of the disagreement in the middle of a high fat diet and a diet that is designed to meet what the scientific standards say humans are designed for. It in effect was going out on a limb. I've got to tell you because it is so much against the flow.

Kevin: Sure.

Doug: But that is my job in many ways, not to go against the flow but to take the science and make it user friendly. That's what I've all the time done, that is what I pride myself from being able to do. Rather than taking the results of this study or that study, because you can prove anyone in our study. Instead, what I've done is look at what the textbooks unanimously agree upon, from medical physiology to sports physiology and other types of sports and doing sciences and simply turn that data and apply that data to the raw food diet.

Kevin: Yeah, you may or may not know the sass to this, but I am just curious. Is there any specific study about longevity and raw foods?

Doug: To my knowledge, there are no studies about longevity and raw food.

Kevin: Okay.

Doug: There are various studies about raw food. There have been quite a few studies on raw food. Most of them have been to demonstrate the inefficacy or the impossibility to survive on a diet, or in effect to thrive on a diet that is predominated calorically by vegetables. And I agree. I agree because in order to consume enough fat from vegetables to meet your daily caloric needs, for instance for me, that would mean eating somewhere as close to 80 heads of lettuce a day. Well, it just cannot be done. I am a big vegetable man. I love my vegetables. In fact, you know, a lot of population are animal rights advocates and I've all the time said that I'm a vegetable rights advocate. I am perfectly happy to sit down and eat tomatoes until the cows' come home, or perfectly happy to eat celery as is. I do not have to disguise it. I am in favor of vegetable rights, and I eat a big salad roughly every particular day and I was raised that way as a child. Eating salad was a general thing for me. And I have over the last 25 years involvement in raw food movement and my total commitment to raw food now is reaching 30 years. I have all the time recommended that we eat lots of greens. In fact to my knowledge, I recommend we consume more greens, not only on the 80-10-10 diet, but on any of the programs that I have ever recommended. I am in effect recommending more green consumption from whole, fresh, ripe, raw, organic plants than any person else in the raw food movement. The funny thing is that most population notice me eating fruits and so, they think that that's what it is all about when in fact, that is not the case. I recommend a huge, in fact as I say it, a greater quantum of fat from greens than any person else in the raw movement. It is just what they see, you know, what they notice is the fruit.

Kevin: There are a lot of population who would say that eating a lot of fruits comes with candida issues? What is the challenge with that and how can what can you overcome some thoughts of that?

Doug: Well, I dedicated a lesson in my book to this very issue. But I can put it in a nutshell for you even more to think of now that I could years ago. I agree with everybody who says that eating a lot of fruits will lead to candida issues if they sharp more fat than they should be, more than they can healthfully tolerate. If they are sharp 30-40-50-60-70, I have on tape any distinct raw food leaders proudly proclaiming that they eat 80 percent of their fat from fat. And that is just fine. If you are eating 60 or 70 percent of your fat from fat well then, you are going to run into issues with sugar metabolism. And the simplest breakdown of it, and I am sorry, if I leave out a few of the details here. If you need more let me know.

But essentially, your blood sugar is monitored by your brain. everybody has blood sugar, regardless of what they eat. I mean, Eskimos living on blood sugar levels that are roughly the same as muscle head living on protein powders or population following the 80-10-10 diet. It doesn't matter whether your preeminent calorie or nutrient is protein, fat or carbs. everybody has roughly the same blood sugar levels in health but when those blood sugar levels start to vary, it's a sign that the body can no longer assert the homeostasis that it strives to assert for us at all times. So, our primary method of controlling our blood sugar level is through function of the pancreas. The pancreas picks out some extra insulin if blood sugar levels rise, because insulin functions as a doormat to conduct sugar out of the bloodstream to the cell. It's rather uncomplicated but as everybody knows, oil is a lubricant, oil coat thing and if there's more fat in our bloodstream than we're designed to handle, it not only coats the blood sugar molecule, it also coats the insulin. Well, when the insulin is coated and the sugar is coated, it's very hard for the insulin to link up with the sugar. They don't recognize each other. Not only that, but the portal where sugar exits the bloodstream becomes clogged with fat. Then, so it's hard for sugar to get out again. Well, the blood sugar level continues to rise so as the brain and eventually, more insulin is produced and the insulin's job is to find sugar. So, finally it's going to, but now there's twice as much or three times as much insulin in the bloodstream as they are supposed to be and finally your blood sugar crashes.

Kevin: And that's because the blood sugar's still high and the insulin isn't able to find the sugar and conduct it.

Doug: But eventually, the insulin does find the sugar but it's slower at it and it should have been until the body puts out a second and a third rush of insulin.

Kevin: Right.

Doug: Okay. Well, as we know, with any muscle in the body, the key to training is not just training but also recovering. What they call overload, overload recover cycle. This is the same for any part of our body. You can invent a tan by giving a miniature bit of sun overload and then recover. You can invent calluses on your hand by giving a miniature bit of a work overload using with a rake or a shovel and then allow for recovery. But if you take too much in any given time, there's a crash, there's a blister, there's sunburn, or you will end up with what is called the visceral failure. In the case of the pancreas, visceral failure takes the form of diabetes, hypo and hyperglycemia and other sugar metabolic disorders. The pancreas can no longer put out enough insulin because it has been putting out too much insulin again and again and again without ever getting a break. Because the mean man is eating triple, quadruple, five times, you know, the fat is recommended at every particular meal and so the body never gets a break and finally the pancreas fail as well.

Great Success Tip - Don't Do What The Pizza Man Did

I've got some bad news for you; you won't get the opening to read this staggering book entitled The Stevedore in the White Fedora. This novel, filled to the brim with stirring passages, was going to captivate your imagination and take you on a marvelous adventure to some of the most infamous ports of the world. Replete with intrigue, passion, action, suspense, drama, and hot romance, this book was in fact going to reach the top of the best-sellers list. And the ensuing movie based on that enchanting story was going to rivet you to your seat to the point you would forget all about your popcorn and cola.

The only problem is ... The book has not been written yet. And it never will be. That's because Isaac Will, who had the whole marvelous script in his head and who kept promising himself he was going to take time off to write it someday, died of a heart attack four days ago. Mr. I. Will's funeral will take place at 3:30 today, in Somerset Cemetery.

I agree with what Stephen Sondheim said on this; "A dream is just a dream, if it's only in your head. If no one gets to see it, it's just as good as dead."

So I beg of you, if you have something inside you that you want to bring out into the world, start working on it now! Today. Operation today, my friends. Operation Today!

On Wednesday, December 3, 2003, I walked into Margarita Pizza to buy one of their award-winning former Italian pizzas (best in Montreal in 1999). I've been stopping there for the same intuit every other week for the last 30-some years. But there was something distinct there that day. For the first time ever, Attilio, the owner, was not behind the counter.

A cordial woman informed me that she and her husband had just acquired the firm a few days earlier. After owning the firm for forty years, 76-year-old Attilio Janiello ultimately decided to sell it and enjoy the fruits of his labor. And from what I heard, the "fruit" was very large.

The deal was signed and money changed hands on the old Friday at 4 Pm. His friend told me that on the way home from the bank that afternoon, Attilio stopped at a travel branch to enquire about plane tickets for a trip to Italy he was planning to make in the arrival months.

On Tuesday December 2nd, at about 8 Am, while having breakfast with his wife and reading his Corriere Italiano, Attilio died of a heart attack. He enjoyed the fruits of 40 years of labor for less than 100 hours ... And yet, I've heard since that visit that he was willing and ready to sell ...about 15 years earlier. He was ready, but he didn't go... Perhaps he was waiting for the time to be just right...He waited too long.

When in Rome

The phrase 'When in Rome, do as the Romans do' has come into the English language to encourage travellers to try out local customs and cuisines. While it is a very liberating expression that gets many tourists into the right spirit, it is one that seems to have become estranged from its roots and its Italian city of origin.

To accompany your meal never ask for a cappuccino, unless you're eating breakfast. For Italians, the inventors of the drink, cappuccino is purely a morning beverage and asking for it after 11am will get you funny looks and a lot of moans.
If you do decide to go ahead with an afternoon cappuccino, remember to order your drink at the bar as receiving table service can triple your bill in some establishments.
It is recommended that before travellers arrive in Italy - even if they leave it to the last minute while they're on their flights to Rome - that they make a list of all the things they want to try, and foods they want to taste - while on holiday. Bringing a list of things not to do or say is sometimes just as worthwhile.

Pizza Dough Can Save You Dough

Homemade Pizza Dough is not just for Pizza
Singles, families, busy professionals all want to get the most out of the time and energy that they spend in the kitchen. They also want to save money. Here's how an easy, basic method can feed you and save you time and money.

Start with a basic pizza dough recipe:

Breakfast Pizza

1 c. Lukewarm water
1 t. Yeast (or 1 pkg. 1/4 oz yeast)
2 1/2 c. Flour
1 T. Olive oil
1 t. Salt

Dissolve the yeast in lukewarm water and let stand for 10 minutes. Put the flour, olive oil, and salt into a mixing bowl Mix in the yeast/water. Mix until the dough leaves the side of the bowl. If the blend is too dry, add water another tablespoon of water. Cover the bowl with a kitchen towel and move it to a warm place dough and let rise for 15 minutes.

At this point, the dough can be lightly floured and settled in a freezer safe plastic storehouse bag. The dough can be refrigerated if it is going to be used within 3 days, or it can be frosty for up to a month. If storing in the freezer, be sure to get as much air out of the bag as possible.

Pizza

Roll out the dough on a floured board or clean countertop into the shape and size of the cookie sheet or pizza pan. Pat & stretch the crust into the pan and top with your popular toppings. Sprinkle with Parmesan cheese. Bake in a 500 oven for 12 minutes or until the crust is golden brown. Remember, thin crust bakes & browns faster.
But here's what else you can do with that dough.

Stromboli

Once you make this, you can customize this method to your own personal preferences.
Roll out the pizza dough on a flour-dusted into a rectangular shape about 1/4 to 1/2 inch thickness. Carefully, place this rectangle on a cookie sheet or sheet pan which has been sprayed with cooking spray or covered in parchment paper. On the long sides, take a sharp knife and make 1 1/2 inch cuts down each side of the dough, about 1 inch apart.
Carefully spread 1/4 c. To 1/2 c. Tomato sauce (or your popular pizza or spaghetti sauce) followed by 1/4 c. Chopped green pepper, 1/4 c. Chopped onion, 1/4 c. Diced ham (Use leftover diced ham or ham lunchmeat torn into 1/2 inch pieces) Sprinkle with 1/2 t. Garlic powder and 1/2 t. Oregano. Fold the strips over the center mixture. Overlap the strips and pinch them together. If desired, you can brush the top of the Stromboli with olive oil.
Bake in a preheated 500 oven for 12 minutes or until browned. Slice into 1 inch strips to serve. Sprinkle with Parmesan cheese.

Stuffed Breads

This method makes a tasty pocket sandwich that can be eaten right away or frosty for later.
Once you get the method down, you can stuff these beauties with anything. I like ham, cheese, and green pepper. Try leftover chopped chicken, chopped potato & cheese. If desired, these breads can be stuffed with chopped vegetables. The key is to not overload the dough.

Roll out the pizza dough into 6 -7 inch circles to 1/4 inch thickness. Since the circles are small, all of the ingredients should be chopped into medium to small pieces. Sprinkle the chopped ingredients with garlic powder, and salt & pepper to taste. Vary the spices to fit the ingredients. Ex. Sprinkle cooked chicken and leftover chopped asparagus with curry powder.

Spread the ingredients one at a time in a strip from top to lowest about 1 inch from the left edge of the dough. At this point, you may want to lightly sprinkle the ingredients with the cheese of your choice.
Be specific not to overfill. Roll the dough by stretching the dough over the filling, tucking in the top and lowest in as you go.

Place stuffed breads seam side down on a cookie sheet lined with parchment paper. Brush the breads lightly with olive oil. Bake in a 500 oven for 10 minutes or until golden brown.
Let cool for 5 minutes and enjoy. The stuffed breads can be frosty at this point. To heat: take the frosty bread out of the freezer and let thaw. Wrap the frosty bread in a piece of foil and heat in a 350 oven for 15 minutes.

AirBake Cookie Sheets - 3 important Questions You Need to Ask

Question 1: Does air baking on cookie sheets make them bake slower than standard baking sheets?

Since air bake cookie sheets insulate and distribute the heat more evenly, you may find for sure recipes that you do need to increase the required baking time for five to ten additional minutes. Unlike standard sheets, you do not have to be concerned about heat fluctuations from your oven that may cause some burnt cookies and some underdone. I know I've been there before!

In my experience, this is not the case all the time so when first experimenting with air insulating cookie sheets, you'll need to keep an eye on the cookie consistency so it's to your liking.

Question 2: Are air insulated baking sheets easy to clean and dishwasher safe?

Obviously, with any product, you should refer to the cleaning instructions supplied from the particular sheet manufacturer.

However, I have found that to get the extended life out of my cookie sheets and prevent scratching and denigration of the non-stick surface, I only hand wash all my non-stick bakeware, whether insulated or standard.

Now on the other hand, if you do a lot of baking using parchment paper, then there is no presuppose unless stated by the constructor to throw it right into your dishwasher.

Question 3: Can you bake pizza on an air-bake cookie sheet?

Are you tired of throwing away food? If you're anything like me, you throw away 10% of your groceries before you even bring them in the house. My philosophy is, why bother to spend the time seasoning, preparation and cooking food only to throw it away after it took up space and coldness in my refrigerator. So I decided to save myself time and throw away a bag or two of groceries directly from the store. Why bother bringing them in the house (my hubby didn't find this custom to practical).

Since I could no longer throw the food away right off the bat, I found a better way to deal with the pesky little problem of left overs. Pizza. In our house, pizza is ordinarily served on a Friday night since Friday is a 'no cook' night. If you're truly good, you can elicit the help of your children and have them put in order the pizza, then it will truly be a 'no-cook' night.

Russets Potatoes: = Idaho Potato = baking potato = starchy potato = chefs potato. They are a high starch potato and have a brown skin and a white flesh to them. The major varieties are Idaho, Burbank, Centennial, and Norgold.

Blue and Purple: These are the most uncommon tubers have flesh that range in a hue from dark blue or a lavender to a white color. They have a somewhat nutty flavor.
