Dorm Room Dining

If it's microwavable and ready to eat in less than ten minutes it's perfect for "dorm room dining." While these probably are not the healthiest foods to keep in your room, they are definitely some of the most popular.

My top 7 dorm food cravings:

1. Ramen Noodles - These salty noodles make the list not only because they are quick and easy to make, but also cheap. You can buy pack of ten for a dollar or less.

2. Kraft Macaroni & Cheese - The boxed version is made on a stove top in less than 20 minutes, but even quicker is a microwaveable container ready to eat in three minutes.

3. Chef Boyardee - A reminder of childhood, Chef Boyardee makes canned pastas and raviolis. It's not as good as mom's cooking, but an easy meal in college.

4. Campbell's Soup - There are many good soups, but one of the most iconic brands is Campbell's Soup. They make over 100 types of condensed soups. That's enough to try something new each day of the semester.

5. Hot Pockets - They taste great but are not necessarily great for you. You can heat up a Breakfast Ham, Egg & Cheese pocket in the morning, the Five Cheese Pizza Croissant Crust for lunch and for dinner the Philly Cheese & Steak.

6. Goldfish Crackers - The perfect snack while studying or between meals. The original and most popular flavor is the color of a true goldfish, cheddar (obviously). They do come in other fun varieties including pizza, ranch and even chocolate.

7. Pop-Tarts - A favorite for either breakfast or just snacking. I think they're best in the toaster but my roommate used to microwave them since the school wouldn't let you have toasters in the dorm rooms.

I also asked a few of my fiends online what their favorites were:

"Chips and salsa, carrots and ranch, easy mac, chicken nuggets (in the microwave of course), bananas taken from the cafeteria." -Erica

"We used to take Oreos and break them apart and put peanut butter in them....A jar of peanut butter is a must." -Rebecca

"TATER TOTS!" -Eileen

Easy Healthy Breakfast Burritos Recipe

We make these easy healthy breakfast burritos for breakfast and for supper. They are full of protein and taste great any time of the day. This recipe is versatile, and you can add any ingredient that is your favorite. It makes great leftovers for lunches the next day, saving you time and money.

Basic Breakfast Burrito Recipe:

Breakfast Pizza

2 lb breakfast sausage, from pasture raised pigs
12 eggs, from pasture raised hens
1-2 cups raw cheddar cheese, shredded

This is the simple basic recipe, for when you are in a hurry:

Crumble the sausage in a skillet and cook until done. Crack 12 eggs and stir in, stirring continuously to scramble in with the sausage. When the eggs are done, turn the heat to low and stir in the cheddar cheese. As the cheese begins to melt, cover with a lid and turn off the heat. This allows the cheese to keep melting without everything burning and sticking to the pan. Serve in butter fried tortillas and top with the toppings listed below.

Tater Tot Breakfast Burrito

While cooking the basic ingredients, sometimes I pop some tater tots in the oven on a greased cookie sheet to bake for about 20 minutes. When the eggs and sausage are done, I put half the tater tots and half the cheese in the skillet and mix. Then I add the rest of the tots and cheese, stir in, and cover to let the cheese melt.

Other Additional Ingredients:

Baked or boiled potatoes, cubed
Black beans
Refried beans
Lots of peppers and onions
Chorizo, a Mexican sausage

Toppings:

Sour cream
Guacamole
Avocadoes, sliced
Tomatoes, diced
Green sauce

The more ingredients you put in the burritos, the more variety it has and the more it bulks it up to have for leftovers. This gives you a variety of nutrients and saves you money by stretching the meal.

Quick Healthy Breakfast Ideas For Kids

Breakfast is the most important meal of the day and is vital to your child's health and growth. A nutritious, healthy breakfast is also an excellent start to your child's school day. It's the brain food they need to be alert and active for the day's studies.

Most often, it's hard to get children to sit down in the morning to a full-course meal. But there are other quick, healthy alternatives if you find your child too sleepy for a full meal or if time is an issue. Breakfast may be more encouraged if you get your little one involved in actually preparing the morning meal. Try it once and see what comes of it. Let them know how important their help in the kitchen really is to you. This may also be a good time to get your whole family gathered around the table. It all depends on your family's schedules and activities.

If you find getting your children interested in a full meal in the morning to be challenging...don't panic. It is very important to at least get them to eat some other quick healthful choices. There are various quick, healthy options for you to choose from. Let's explore...

Below are some food choices to get your kids moving in the morning

Smoothies

Drinking a refreshing smoothie makes it a lot easier to add more fruits and veggies to your diet, and kids love them. Smoothies give you a colorful variety of fruits and veggies. They are also easy and fun to make.

Banana Pineapple Smoothie

Ingredients

1 cup cubed fresh pineapple
2 bananas sliced
1 cup unsweetened soy milk
1 cup non-fat yogurt (any flavor)
Ice cubes
Sweetener if desired

Directions

Combine fresh pineapples, bananas, soy milk, yogurt, and ice cubes in a blender.
Blend until smooth. Serves about 4.

Carrot Apple Juice Smoothie

Ingredients

1 cup peeled and diced carrots
1 1/2 cup apple juice
1/2 cup cold water
Ice cubes

Directions

Toss all ingredients into a blender. Blend until smooth

Muffins and Bagels

For healthier muffins or bagels of course, you need to bake the homemade type. It is best to make them with whole wheat flour. Homemade bran muffins are excellent with some low fat butter and low sugar jelly or jam and are also a good source of fiber. Apple or pear butter on top will also give you some added variety.

Below is a nutritious recipe I think your kids will take a liking to. Who says you can't have pizza for breakfast?

Muffin Pizza

Ingredients

2 english muffins
pizza sauce
grated mozzarella cheese
1 slice low-fat deli chopped ham
2 scrambled eggs (may substitute egg beaters)

Directions

Cut the 2 muffins in half. Top with pizza sauce, grated cheese, chopped ham, and eggs. Place under toaster oven for a minute or two. Adjust settings to your liking. Offer your child a piece of fruit on the side.

Fruit Salads

There are many variations of fruit salads and really, they are great anytime of the day...not just for breakfast. Fruit salads are excellent with some non-fat yogurt dip.

Breakfast Casseroles

There are many types of casseroles for breakfast. And to make them healthy, you can add any kind of veggies you like and is highly recommended to add to your daily intake of vegetables. Using turkey bacon or sausage and low fat cheeses is ideal when it comes to healthy casseroles. Also using an egg substitute such as egg beaters will give you less fat and cholesterol. With casseroles, you can make them ahead the night before and pop them in the oven in the morning.

Last Minute Breakfast

Always have dried fruits, nuts, dates, sunflower seeds, pumpkin seeds, and trail mixes on hand to toss into sealed plastic bags for those mornings when time just doesn't permit for a breakfast meal. Make for sure each child gets one of these bags before leaving the house.

There you have it...just a few ideas to keep breakfast healthy for your little ones. Also...don't forget to eat a good breakfast yourself.

Breakfast Suggestions For Morning Meal-Skippers

Are you one of many people who tends to skip breakfast altogether? Do you use the following excuses more often than not: "I can't eat in early in the day-it upsets my stomach," "Breakfast is one of the most fattening meals of the day," and "I don't have time to make breakfast." Each of these excuses may SEEM true, but there are certainly ways around them. Keep reading for breakfast ideas to combat each of the three "breakfast excuses."

If the thought of pancakes or eggs and toast first thing in the morning makes you feel sick to your stomach, you may be considering the wrong foods. While eggs are certainly a healthy breakfast food, you don't have to limit your breakfast options to sweet or greasy foods. Some people's stomachs are genuinely more sensitive in the morning, and for circumstances such as this it is recommended that you start out with something light, and then see how you feel.

Breakfast Pizza

After you wake up, try to manage your way over to the kitchen to boil some water for a nice cup of tea (with milk and sugar, if you like). Warm tea is great for settling an upset stomach, so we recommend having a cup of tea to "test the waters" on your stomach's reaction to stimulation early in the day. If the tea goes okay, try opting for a bland food, such as toast, oatmeal (porridge), bananas, cantaloupe, raisins, or even a bran or pumpkin-based muffin. Try going through a list of foods in your head and see how your stomach acts in response. Boiled eggs and tuna? Crackers with mozzarella cheese and turkey? There are loads of protein-rich foods that you can use to start your day off with a nutritional boost, you just have to be willing to give them a try!

If you're worried about gaining weight from eating breakfast, you are likely putting it on because you DON'T eat breakfast. When you skip a meal, you body starts hoarding any fat it can get from the meals that you DO eat in preparation for another long period without food. For instance, if you eat supper but skip breakfast and lunch, your body is going to store the fattiest parts of the food from supper to build up a reserve of energy. Imagine that your body isn't sure when the next bit of nutrition will come along, so it's saving for a rainy day. Instead of breaking down and disposing of unnecessary fats, your body is keeping them because they're a high source of energy. A healthy breakfast will go a long way in aiding your weight loss. Try opting for cereals high in bran/fiber topped with skim milk, or boiled or scrambled eggs with whole wheat toast and unsalted margarine. There are plenty of healthy breakfast choices; if you find it difficult to think of any that sound appealing, do a search on the Internet.

You might find that you rush around every morning and still have trouble making it in to work or dropping the kids off at school on time. We all go through this, but your health shouldn't suffer due to schedule restrictions. Whenever you get some spare time on the weekend, perhaps chop up a large amount of fresh fruit or whip up some pancakes. Store the pre-made breakfast in a freezer-safe container and pop it in the freezer. Before you go to bed at night, take the next day's breakfast out of the freezer and pop it in the fridge. When you wake up in the morning, that bowl of fruit or the handful of pancakes will be ready for you to munch on while you're heading out the door (or to snack on while you're working). Smoothies are a great morning boost that can be made the night before. Just chuck your favourite fruit, some vanilla or plain yogurt, and a handful of ice into a blender. Put the ready-to-drink smoothie mixture in a glass and seal the top with plastic wrap, then place it in the fridge. In the morning, just remove the plastic wrap, throw in a straw, and you've got a breakfast on the go.

We have all been told that breakfast is the most important meal of the day and it's absolutely true. The meal we get in the morning not only "breaks the fast" of the hours we were sleeping throughout the night, but it sets our bodies up with the nutrition we need to face the day. Try to give a little thought to your breakfast routine. Do you need to make some changes?

Feta Cheese And Spinach Pizza Recipe

The most popular pizza in the United States is topped with mozzarella, tomato sauce, and pepperoni but sometimes it is nice to try something different. If you are looking for new recipe ideas, what about trying the following feta cheese and spinach pizza recipe?

The bold flavors go together perfectly. The addition of olives, fresh rosemary, and feta cheese give this pizza a wonderful Greek flavor. If you do not have spinach, you can use chard instead. Make sure it is tender and seasoned well before adding it. This recipe makes two nine inch pizzas or one fifteen inch one.

Breakfast Pizza

This pizza is a nice one to make for kids as well as adults. If you are catering for a buffet you could even make this and serve it hot, warm, or chilled. You can double the recipe if you like and make a big rectangular one, which you can then slice into squares. Leftover pizza keeps well in the refrigerator for a couple of days but this one is so good it is unlikely you will have any leftover!

Take care not to overcook the spinach. It will only take a minute to wilt and it needs to keep its bright green color, else it will go soggy and lose some of its flavor. Put the cooked greens in a chilled metal colander or sieve when they are done so they will cool down faster. The combination of three cheeses in this recipe helps to make it extra special and the feta, in particular, is amazing with the spinach.

What You Will Need:

Pizza dough 1/2 thinly sliced red onion 1 tablespoons extra virgin olive oil 6 chopped, pitted kalamata olives 1 teaspoon minced lemon rind 8 cups rinsed, de-stemmed spinach 3 oz crumbled feta 2 finely chopped cloves garlic 1/2 oz grated parmesan 1/4 lb grated mozzarella 1 teaspoon chopped fresh rosemary Garlic oil, salt and pepper

How To Make It:

Heat two teaspoons of the oil in a pan and saute the red onion with some salt and pepper for five minutes or until tender. Add half the garlic and cook for one minute. Transfer the mixture into a bowl.

Heat the rest of the oil in the pan and wilt the spinach with a pinch of salt and pepper and the remaining garlic. After one minute or when the spinach has wilted but is still brightly colored, take it out of the pan and let it cool. Use your hands to squeeze out the excess moisture then chop it and toss it with the lemon peel. Preheat the oven to 500 degrees F. Roll out the dough and put it on a greased peel or pan.

Brush the garlic oil over it, and then spread the onion over the crust and the spinach. Sprinkle the olives, feta, and mozzarella on top. Bake it for ten minutes or until the crust is crispy and golden brown. Sprinkle some rosemary and parmesan over the top and serve.

Feta Cheese And Spinach Pizza Recipe

There are great pizza recipes for any occasion and making a Greek pizza with spinach and feta is a very good idea. You can make the whole pizza yourself using a homemade pizza dough recipe or you can buy a pizza crust and prepare the toppings yourself.
