Easy Bran Muffin Recipe

This bran muffin recipe is a wonderful alternative to a slice of bread or toast for a quick breakfast, lunch or snack. It's also a great idea to add one to the lunch box.

These bran muffins are great because they provide plenty of soluble and insoluble fiber.
Insoluble fiber keeps the intestines healthy - helping prevent many forms of intestinal cancer. Soluble fiber is great for controlling blood cholesterol and can even help reduce it.

This muffin recipe is very versatile. You can very easily add some grated carrot, apple or mashed banana to vary the taste and add some extra goodness. You can also add some nuts and seeds to give a healthy essential fatty acid boost to the brain which has been proven to really boost children's performance in school and of course it is very beneficial to adults in the same way too. These fats are so important that your body will crave them if it doesn't get them.

Bran Muffin Recipe
Ingredients:

* 750ml (3c) bran

* 300ml (1 1/4c) whole wheat flour

* 60ml (1/4c) oat bran

* 125ml (1/2c) sugar

* 10ml (2t) baking soda (bicarbonate of soda)

* pinch of salt

* 2 eggs

* 500ml (2c) low fat milk or buttermilk

* 60ml (1/4c) oil (try canola oil)

Directions:

1. Preheat the oven to 200 degC (400 degF).
2. Put all the dry ingredients into a mixing bowl.
3. Add the eggs and milk or buttermilk and oil.
4. Mix together until just combined.
5. Depending on your climate, you may have to add a bit more milk. The mixture must not be stiff.
6. Spoon the mixture into greased muffin tins and bake for 15 - 20 minutes until done.

I hope you enjoy them - and remember to have fun playing around with changing this and that. Try adding some grated apple and seeds or nuts to spice it up a bit. Speaking of spice, adding 5ml(1t) of cinnamon would also taste delicious. Cinnamon is great for stabilising blood sugar so that's an added health benefit too! There's really no limit to what you can do.

Easy Flax Muffin Breakfast

This is an easy healthy breakfast recipe that will keep you satisfied and energized well into the lunch hour.

Ingredients (Serves 2)
4 eggs
4 slices of turkey bacon
2 flax muffins (You can find flax muffins at your local grocery store, we also have a recipe linked at the bottom if you want to make them youself)
1 Grapefruit
Pam
Splenda

Breakfast Pizza

To start off, warm up a pan on medium high heat. Spray the pan with Pam and begin cooking the eggs. You can cook the eggs anyway you like. I prefer over-easy myself, but scrambled or any other way is just as well.

Cook the eggs to completion and set them aside. Now you can begin cooking the turkey bacon. Don't worry about the eggs getting cold, turkey bacon cooks in less than five minutes.

As you're cooking the turkey bacon, get the grapefruit ready. Slice the grapefruit in half, and sprinkle the tops of each half with Splenda, not sugar. Sugar adds unnecessary calories to the meal and will only give you a drop in energy later. You can serve the grapefruit without Splenda if you like, but many people find the taste a little too bitter without something sweet to offset it. Also, make sure to serve the grapefruit with a spoon!

The bacon should be getting close to done by now. As a final step I like to heat up my muffin for about 15 seconds in the microwave. The warm muffins taste a bit better.

By now your meal should be done. Pour yourself a nice glass of orange juice, water or milk, place everything on a plate (don't forget the salt and pepper) serve and enjoy!
